Paleo Chocolate Chip Blondies

Ingredients

  • 1 ½ cups blanched almond flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ cup coconut oil melted
  • ¼ cup honey
  • 1 egg beaten
  • 1 teaspoon vanilla extract
  • ½ cup shredded unsweetened coconut
  • ½ cup dark chocolate chips

Instructions

  1. Preheat oven to 350F. Line an 8x8-inch pan with parchment paper or spray with baking spray.
  2. In a mixing bowl, whisk together almond meal, baking soda, salt, and cinnamon. Beat in coconut oil, honey, egg, and vanilla extract. Use a rubber spatula to fold in coconut and chocolate chips.
  3. Bake for about 15 minutes or until a toothpick inserted into the center comes out clean. Cool completely before serving.
