In a mixing bowl, whisk together almond meal, baking soda, salt, and cinnamon. Beat in coconut oil, honey, egg, and vanilla extract. Use a rubber spatula to fold in coconut and chocolate chips.
Bake for about 15 minutes or until a toothpick inserted into the center comes out clean. Cool completely before serving.
