Paleo Blueberry Muffins

Ingredients

  • 4 eggs
  • ½ cup butter or coconut oil, melted and cooled
  • ¼ cup unsweetened applesauce
  • cup honey
  • 2 teaspoons vanilla
  • 2 teaspoons apple cider vinegar
  • cup coconut flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup blueberries

Instructions

  1. Preheat oven to 350F. Line a 12-cup muffin tin with paper liners.
  2. In a stand mixer fitted with a paddle attachment, beat eggs and butter until combined. Beat in applesauce, honey, vanilla, apple cider vinegar, coconut flour, baking soda, and salt until almost no lumps remain. Gently fold in blueberries.
  3. Fill each muffin cup about ⅔s full.
  4. Bake 17 - 20 minutes or until a toothpick inserted into the center comes out clean.Transfer to a wire rack to cool.
