Honey Mustard Glazed Chicken Thighs

Ingredients

  • 1 ½ pounds bone-in skin-on chicken thighs
  • 2 tablespoons coconut oil or butter, melted
  • 2 tablespoons dijon mustard
  • 1 tablespoon honey
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 375F.
  2. Heat a large pan over medium-high heat.
  3. Whisk together melted coconut oil, dijon mustard, honey, and salt. Brush this mixture on all sides of the chicken thighs.
  4. Place the chicken thighs in the pan, fat side down. Cook about 3 minutes or until browned; flip and cook another 3 minutes or until browned. Remove to a baking sheet. Continue until all chicken thighs are browned.
  5. Bake the chicken thighs in preheated oven 20 - 25 minutes or until cooked through.
