Cheesy Quinoa Bites

Ingredients

cups
cooked quinoa
cooked in low-sodium chicken broth, preferably

large eggs
1
cup
shredded carrot
2
stalks green onion
diced
2
cloves
garlic
minced
2
tablespoons
fresh basil
chopped
½
cup
grated Parmesan cheese
2
tablespoons
all-purpose flour
½
teaspoon
seasoned salt
¼
teaspoon
freshly ground pepper
Instructions
Preheat oven to 350F.
Mix together quinoa, carrot, egg, green onion, garlic, basil, cheese, flour, seasoned salt and pepper.
Distribute mixture into a greased mini muffin tin, filling each cup to the top.
Bake for 15-20 minutes or until bites are firm to the touch.
