Greek Farro Salad

Ingredients

Dressing:

  • ½ teaspoon lemon zest
  • 2 tablespoon lemon juice
  • 2 tablespoon olive oil
  • 2 tablespoon red wine vinegar
  • ½ teaspoon dried oregano
  • ¼ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Salad:

  • 3 cups farro cooked and cooled
  • ½ cup cucumber diced
  • 1 ½ cups grape tomatoes halved
  • cup kalamata olives halved
  • ¼ cup red onion thinly sliced
  • 4 ounces feta cheese

Instructions

  1. To make the dressing, whisk all ingredients together until combined.

  2. To assemble the salad, Add all ingredients but feta cheese to a large mixing bowl. Drizzle dressing over top and toss to combine. Stir in feta before serving.
