Preheat oven to 350F. Line 24 muffin cups with paper liners.

In the bowl of an electric mixer, cream butter and sugar together until light and fluffy. Add egg and beat until combined. Add bananas, vanilla and McCafé Premium Roast Coffee; beat until combined.

In a separate mixing bowl, whisk together flour, baking powder, baking soda, and salt. Add this mixture to the butter mixture and beat until just combined. Stir in chocolate chips.

Bake for 18 - 22 minutes or a toothpick inserted into the center comes out clean.
