I don’t know about you but my favorite thing about Easter is brunch. And my favorite thing about brunch is bellinis.
Last year I went to THE WORLD’S WORST EASTER EGG HUNT (not the actual name) where adults were pushing kids out of the way to get to eggs. My kids came home with 2 eggs. Between the 3 of them.
If you live on Fort Carson, avoid the egg hunt at all costs. I still have nightmares about it.
I could’ve used a bellini or two that day.
This year, we’ll be hotel living. Possibly in Texas, possibly in Colorado. What I know for sure is that I’ll definitely need bellinis.
And probably a few bags of white chocolate Cadbury Mini Eggs.
Anyway, I’m obviously still obsessed with blood oranges. I’m on my 3rd bag and I’ve yet to actually eat one. We’ve had lots of fresh juice, margaritas, and now bellinis.
These Blood Orange Bellinis are so yummy and so easy! All you need is the blood oranges and a bottle of Prosecco!

Blood Orange Bellinis
Ingredients
- ½ cup blood orange juice, 2 to 3 blood oranges
- 1 750 mL bottle Prosecco, chilled
Instructions
- Divide the blood orange juice among 4 champagne glasses. Fill the glasses with the chilled Prosecco. Serve immediately.

If you ever find yourself in Philly there’s this place that does UNLIMITED BELLINIS at brunch…and you can choose your own fruit juice mix-in. I think you would love it. The blood orange in this is fabulous!!

I’ve never done a public Easter egg hunt…and apparently that’s a good thing! I just hide them all around our house and backyard. Much more peaceful. Although I could still use one of these bellinis.

why will you be hotel living? during temp housing or until you find a house? When we moved to Madison, I stayed behind in WA so my daughter could start 1st grade there and then we followed 3 months later. . my husband had to stay in a hotel for 3 months. . but I think he loved it. . maid service .. and he ate fast food for 3 months because I wasn’t there. . :P LOVE these blood orange bellinis!!! This is what I want at my Easter brunch!

We’ve got, like, 6 days between moving out of our house here and (hopefully) getting keys to the new place. It won’t be awful – just a very small space for all 5 of us plus 2 dogs!

Blood oranges are my favorite fruit! I find some Prosecco a touch too sweet so I use Cava (Spain) or Cremant (France).

I completely avoid large, public Easter egg hunts. Somewhere along the way they became less of a hunt and more of a “big people run and grab as many eggs as you can and stick them in your kid’s baskets”. They last all of about 5 seconds and the eggs aren’t even hidden! What fun is that?
I LOVE brunch. Mainly because it means that alcohol is acceptable in the morning. And sometimes, you need it. These are gorgeous!

I love bellinis, too!! I also love a good Bloody Mary bar but either switch to the bellini after just one Bloody Mary or just start there, depending on my mood. Blood orange is my favorite flavor, too!
