Breakfast Pizza – pizza with bacon, 2 kinds of cheese, runny eggs, and chives on top! Perfect for breakfast for dinner!
We are loving the pizza right now, huh?
It’s a quick dinner to pull together (as long as you remember to get the crust going early enough) and it’s always a crowd pleaser. I’ve been trying to make one once a week because it’s also an inexpensive meal, especially one like this Breakfast Pizza where the main ingredients are eggs and a few slices of bacon.
Breakfast Pizza!
I have always wanted to make a pizza with eggs on top but I was afraid of how my husband would react. He’s been happy with all of my pizza creations so far but eggs? On pizza? I thought that might just be too much for him.
He loved it. I loved it. My 3 year old specifically requested a piece with an egg and then tore it up. You could have knocked me over with a feather. Next time I will add more chives (there’s something you’ll never hear me say again) because the chives totally made the whole thing.

Breakfast Pizza
Ingredients
- 1 homemade or store-bought pizza dough
- 6 strips bacon
- 1 cup grated Parmesan
- 1 cups grated mozzarella
- 4 eggs
- salt and pepper
- 2 tablespoons minced chives
- olive oil for brushing
Instructions

Preheat the oven to 500F or follow package instruction.

Fry bacon strips over medium-high heat until crisp. Cool on a plate lined with paper towels. Crumble. Set aside.

Dust your baking sheet with cornmeal and stretch dough to fit. Sprinkle with Parmesan, mozzarella, and bacon. Crack eggs over top and season and season with salt and pepper. Brush the exposed crust with olive oil.

Bake for 10 – 12 minutes or until eggs are cooked through and crust is golden brown. Sprinkle chives over top.

For me, it was kind of wet and a pain to work with but it always produced really tasty crust. I’m still on that hunt for the perfect crust recipe though! Sigh.

I usually make my pizzas on a stone, but the manufacturer recommends not going over 450 degrees. I wonder if I make the ‘za at that temperature, would the eggs cook enough? This is a really beautiful thing! And with a little prep work could be an excellent family breakfast before everyone runs off to work and school, like on a birthday (there’s one coming up, conveniently). Might have to play with this a bit….

I think it would be fine. My eggs ended up cooked all the way through when I wanted them a little runny so I think lowering the temp would be fine. Thanks for reading and commenting! :)

Oh! Well, of course they cooked through. Everything around them was still hot, so they were still cooking. My pickiest eater looked at the photo and said, “Yeah, I’d try that. It sounds really good.” So we’re going to try it pretty soon.

I totally made this and it was awesome!! I cheated though and used the bacon you just crisp in the microwave. It was late at night and I wanted something good in the morning for breakfast! It was still very delicious!

I love pizzas with eggs cracked on top. The runny yolk melds with the gooey cheese to create magic. I just ate breakfast, but you have me hungry all over again. ;)

Eggs on pizza is a very authentic Italian thing. My Italian grandmother used to do it and it’s a standard topping in the pizza restaurants I visited in Italy although Italians do not eat pizza for breakfast. Eggs are particularly common on “house special” pizzas that have lots of different toppings. They break an egg in the very center just before it goes into the oven and when it comes to your table, you’re supposed to break the yolk and spread it around so everyone gets a little yolk on their slice. The egg is sooooo delicious with salty ham, cheese, sausage, pepperoni, anchovies, olives, etc.! Your version is utterly gorgeous, Amanda!
