Have you gotten creative with lunch ideas while we’ve been staying at home?
I’ve been trying to come up with easy ideas that aren’t the usual cold sandwich but are still delicious.
These Mini Pizza Bagels have become a staple because not only do my kids love them, it takes me less than an hour to assemble a bunch of them and pop them in the freezer for even easier lunches.
Thomas’® Plain Mini Bagels are a weekly purchase in my house. I love them because they have the same crispy outside and chewy inside as the regular size Thomas’® bagels but they’re small for tiny hands.
They also have Cinnamon Raisin Mini Bagels. For regular size bagels, they have Plain, Cinnamon Raisin, and Everything, a size and flavor for any occasion! It’s obvious Thomas’® has a tradition of taste and quality in all their bagels, from generations of experience!
Plus, the toppings are endless! My kids have been known to put nut butter, cream cheese, chocolate hazelnut spread, sandwiches with deli meat – we use Thomas’® bagels for breakfast, snacks, lunches, and everything else!
I include the mini bagels in my weekly Walmart grocery pickup. I love Walmart grocery pickup. It has definitely saved me multiple times when I didn’t want to take all 3 of my kids into the store. Click on the image below to add Thomas’® bagels right to your Walmart Online Grocery cart.
You order everything online, schedule your time for pickup, and then once it’s time; they bring it right out to your car.
Thomas also has a program called NourishingReading.com where you can earn books for buying participating brands.

Can You Freeze Them?
My favorite part about these mini pizza bagels is how well they freeze. I’ve been known to buy a couple bags of Thomas’® Plain Mini Bagels just to make a ton of these little pizzas to have in the freezer.
The best way to freeze them is to put the assembled pizzas (before baking!) onto a baking sheet and putting that into the freezer for a couple hours until all the ingredients are pretty frozen. And then you can gently transfer them to a freezer bag and store them in the freezer for up to 3 months.
To bake from frozen, preheat the oven to 350F and bake for 20 – 25 minutes, until the bagels and crispy and the cheese is melted.
Preheat oven to 350F. To freeze: place prepared bagels on a baking sheet and freeze for a few hours, until all ingredients are frozen. From there, you can gently place them in a plastic freezer bag and freeze until you're ready to bake. To bake from frozen, bake at 350F for 20 - 25 minutes, until bagel is toasted and cheese is melted.
Line a baking sheet with parchment paper.
Split each bagel and place on prepared baking sheet.
Spread a spoonful of pizza sauce on each bagel half. Sprinkle with cheese and pepperoni. (Stop here if freezing!)
Bake in preheated oven for about 15 minutes, until the bagels are toasted and the cheese is melted.
