Carrot Apple Salad is the perfect quick, healthy side dish! It’s a kid favorite and so easy to put together. Thinly sliced carrots and apples with raisins in a creamy sweet and tangy dressing.
It’s finally the first day of school around here!
Y’all know I love summer but man, this was a long one. This was the first summer in years that we didn’t take several roadtrips so it was just me and 3 boys.
In central Texas. Where from the hours of 9 am to 7 pm, it’s too hot to play outside most days.
So now we’re transitioning to school and soccer and football and whatever else the boys plan on getting into. I’m anticipating a very busy fall.
Which means that I’m looking for quick and easy dinner ideas.
I picked up some Farm Rich products at my local Walmart in the freezer section not long ago because I know they’re made with wholesome ingredients, make my kids happy, and won’t take long to get on the table.
These Farm Rich Avocado Slices are everything. It’s fresh sliced avocado coated with a slightly spicy coating and then you bake them until the coating is crispy and then there’s jalapeno ranch to dip them in. And omg, do I have to share these with my kids?
They have other delicious meal solutions and snacks like our favorite Loaded Potato Skins and BBQ Chicken Bites (both in the photos below!).
Plus, delicious mozzarella sticks, jalapeno poppers, and buffalo chicken bites. All of which would be beyond perfect for a football party where you actually want to hang out with your friends instead of hanging out in the kitchen all day.
Carrot Apple Salad!
So while you’re preheating your oven and waiting for your Avocado Slices to bake up crunchy and delicious, let’s make a salad to go on the side.
This Carrot Apple Salad is kind of like a cole slaw but it doesn’t have cabbage and I refuse to call anything without cabbage a slaw so we’re calling it a salad.
But it’s thinly sliced carrots and apples in a creamy cole slaw dressing that’s sweet and tangy and delicious.
Oh, and then you toss in some raisins for extra sweetness and a little chewiness.
It takes minutes to put together AND you probably already have everything in your fridge/pantry.
My 6 year old is obsessed with this salad. Obsessed. I packed it in his lunchbox this morning.
- 4 cups carrots very thinly sliced
- 2 cups Granny Smith apples very thinly sliced
- 1 cup raisins
- 1/4 cup mayo
- 2 tablespoons sour cream
- 2 tablespoons sugar
- 2 tablespoons apple cider vinegar
- salt and pepper to taste
Combine carrots, apples, and raisins in a large mixing bowl.
In a separate bowl, whisk together mayo, sour cream, sugar, apple cider vinegar, and salt and pepper until well combined. Pour over the carrot mixture and toss to combine. Refrigerate until ready to leave.
