Happy Monday, guys!

I have officially entered that weird space where I really need my kids to go back to school because they are driving me crazy but I also want it to be summer forever so I don’t have to go back to real life.

I’ve been trying to get back into cooking more though. I can’t tell you how many times we’ve had cereal for dinner this summer. It’s just so easy to lose track of time and all the sudden it’s 6 pm and everyone is starving and maybe I haven’t been to the grocery store in a couple weeks.

Whatever.

So I’m currently obsessed with simple meals that only require a few ingredients and only take a few minutes to prep.

Another thing I’m obsessed with: Smucker’s Fruit & Honey spreads. These are my favorite. Short ingredient list, sweetened with honey instead of corn syrup, basically everything I want in a spread like this. Definitely better for you than the average fruit spread.

And their newest flavor is Strawberry Jalapeno.

Yep.

I know.

I may have actually squealed the first time I spotted it on the shelf at Walmart. Sweet heat is kind of my thing.

Salmon!

This salmon is SO EASY and has so much flavor thanks for the Strawberry Jalapeno fruit spread. Seriously, 5 minutes of prep, maybe less, and then in the oven for about 15 minutes. You’ve got a delicious, healthy dinner that’s perfect paired with brown rice or on top of a big bed of greens.

Strawberry Jalapeno Salmon

4 servings

Ingredients

1 pound fresh salmon, cut into 4 fillets
1/2 cup Smucker’s Fruit & Honey Strawberry Jalapeno Fruit Spread
1 teaspoon garlic powder
salt and pepper
chopped parsley

Instructions

  1. Preheat oven to 350F. Spray a rimmed baking sheet with oil.
  2. Place salmon on baking sheet, skin side down.
  3. In a small bowl, whisk together Smucker’s Fruit & Honey Strawberry Jalapeno Fruit Spread, garlic powder, and salt and pepper.
  4. Spread the mixture over the salmon.
  5. Bake 15 - 18 minutes or until salmon flakes easily.
  6. Sprinkle with parsley before serving.
