What do you make on Valentine’s Day?

I don’t know why but I always go for something super rich and decadent and full of chocolate. And usually Chipotle before that. But for dessert, it’s always flourless chocolate cake or brownie pudding or something that would be too rich for any other day of the year.

This year I’m in the mood for red velvet.

Because what says Valentine’s Day more than bright red baked goods?!

Also, have we ever talked about how much I love conversation hearts? I’ve been through 4 bags of them this month. FOUR! And the last bag I bought was the gross, kind of sour ones that are pretty awful! And yeah, I still ate the. entire. bag.

I am a conversation hearts addict.

Like, I’m seriously considering stocking up on them for later this year when I’ve run out of all the Cadbury eggs I plan to buy and am going through serious holiday candy withdrawals.

Red Velvet Brownies with Cream Cheese Frosting - perfect for Valentine's Day! These are so pretty and so delicious!

Ingredients for Red Velvet Brownies

  • Bittersweet chocolate
  • Butter
  • Sugar
  • Eggs
  • All-purpose flour
  • Red liquid food coloring
  • Vanilla
  • Salt
  • Cream cheese
  • Powdered sugar

Directions

  • Melt chocolate and butter over low heat, stirring until smooth
  • Whisk in sugar, eggs, flour, red food coloring, baking powder, vanilla, and salt
  • Pour mixture into the a 9×9-inch pan lined with parchment paper
  • Bake at 350F for 45 minutes
  • Cool completely before frosting
  • Beat cream cheese and butter 
  • Add powdered sugar, salt, and vanilla and beat until well blended
  • Frost brownies once cool and cut into 16 bars

Can You Freeze Red Velvet Brownies?

You can freeze these brownies but I would recommend freezing them without the cream cheese frosting.

Wrap the brownies individually in aluminum foil and then place them in a freezer ziploc bag. 

They should be fine in the freezer for up to 3 months. To defrost, let sit at room temperature overnight. Or microwave for 20 seconds at a time until it reaches the desired temperature.

Red Velvet Brownies

Yield: 16 servings
Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 1 hour

Ingredients

  • 1 4 ounce bittersweet chocolate, chopped
  • 3/4 cup butter
  • 2 cups sugar
  • 4 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 1-ounce bottle red liquid food coloring
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt

For the frosting:

  • 1 8 ounce package cream cheese, softened
  • 3 tablespoons butter, softened
  • 1 1/2 cups powdered sugar
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 350F. Line bottom and sides of a 9-inch square pan with aluminum foil.
  2. Melt chocolate and butter over low heat, stirring until smooth. Transfer to a mixing bowl. Whisk in sugar. Add eggs, 1 at a time, whisking just until blended after each addition. Gently stir in flour and next 4 ingredients. Pour mixture into prepared pan.
  3. Bake at 350F for 45 to 48 minutes or until a wooden pick inserted in center comes out with a few moist crumbs. Cool completely on a wire rack before frosting.

To make the frosting:

  1. Beat cream cheese and butter until combined. Slowly add in powdered sugar, salt,and vanilla. Beat until blended. Frost brownies and cut into 16 bars.

    I’m so with you on the conversation hearts! They’re soooo good and they’re even better this time of year. These red velvet brownies sound delicious too, I love that cream cheese frosting on top!

    I totally use Valentine’s Day as an excuse to indulge in rich, decadent desserts, too. 99% of the time it involves chocolate, but red velvet + icing is the best of everything. And hoarding seasonal candy for times when it isn’t stocked in the stores anymore? Not that I know anything about that…

    LOL! I actually kinda like the sour conversation hearts! <3 I haven't bought ANY Valentine's candy yet…. need to get on that. I love these brownies. So perfectly festive, and hello, you can't go wrong with cream cheese frosting! Love!
