I have officially entered that weird space where I really need my kids to go back to school because they are driving me crazy but I also want it to be summer forever so I don’t have to go back to real life.
I’ve been trying to get back into cooking more though. I can’t tell you how many times we’ve had cereal for dinner this summer. It’s just so easy to lose track of time and all the sudden it’s 6 pm and everyone is starving and maybe I haven’t been to the grocery store in a couple weeks.
Whatever.
So I’m currently obsessed with simple meals that only require a few ingredients and only take a few minutes to prep.
Strawberry Jalapeno Salmon Recipe
This salmon is SO EASY and has so much flavor thanks for the strawberry jalapeno jam. Seriously, 5 minutes of prep, maybe less, and then in the oven for about 15 minutes. You’ve got a delicious, healthy dinner that’s perfect paired with brown rice or on top of a big bed of greens.

Strawberry Jalapeno Salmon
Ingredients
- 1 pound fresh salmon, cut into 4 fillets
- ½ cup strawberry jalapeno jam
- 1 teaspoon garlic powder
- salt and pepper
- chopped parsley
Instructions
- Preheat oven to 350F. Spray a rimmed baking sheet with oil.
- Place salmon on baking sheet, skin side down.
- In a small bowl, whisk together strawberry jalapeno jam, garlic powder, and salt and pepper.
- Spread the mixture over the salmon.
- Bake 15 - 18 minutes or until salmon flakes easily.
- Sprinkle with parsley before serving.

A friend on Oahu loved this flavor: Smuckers fruit & honey naturally sweetened with honey tropical fruit. She also puts it in her cottage cheese or yogurt. Glad you said you found it at Walmart! Going there next.
