Chicken Fajitas - easy and delicious weeknight meal!
I’ve officially reached the point of summer where I have no concept of time. I hang out with the kids all day at the lake or in the woods or whatever and then come home and watch them spray each other with the hose on the trampoline all evening.
And then it’s 8 pm and dinner was supposed to be hours ago and everyone’s hangry and we need food immediately and I just honestly don’t feel like fussing with much.
So I’ve got a list of quick and easy recipes that don’t require me to keep a ton of stuff on hand and that no one will complain about.
These Chicken Fajitas are at the top of that list..

These Member’s Mark Chicken Fajitas from ​Sam’s Club​ have changed my life.
They’re fully cooked and take literally 5 minutes to warm up. And they’re super flavorful and the grill marks are​ gorgeous.​
And then I buy a huge package of flour tortillas from Sam’s Club and let the kids load them up with sauteed peppers and onions, guacamole, salsa, whatever they want.
So not only is it a really easy meal, it’s also one you can kind of customize to each kid or adult in your fam.

While I was at Sam’s Club, I also picked up a Coca Cola® Variety Pack that included
Barq’s ® Root Beer, Fanta ® Orange, and, my personal fave, Cherry Coca-Cola ®. They go perfect with
the chicken fajitas, especially if you like to pile yours high with spicy salsa like I do!
They’re also perfect for our lake days because what’s better than a cold Barq’s ® Root Beer when

you’re sitting out in the sun?

Like I mentioned, you can top your chicken fajitas with whatever you want. I keep it easy and just quickly saute some sliced bell peppers and onions while I’m heating up the chicken fajitas. They both take about 5 minutes. Just until the veggies are a bit soft but still have a nice crunch to them. Then you just need a bit of your favorite salsa on top and I even buy my guacamole premade because it’s summer and I don’t have time to​ mash avocado and dice jalapenos when I just want to be outside reading a book in the​ sun.
Although if you really, really, really wanna make your own guacamole, lemme recommend my ​grilled corn and bacon guacamole​. Because, life changing.
Serve it with a nice cold can of Cherry Coca-Cola ® and you have my most favorite summer meal.

Next time you’re at Sam’s Club, make sure you keep an eye out for the Member’s Mark Chicken Fajitas – they’ll be in the refrigerated section. They’d be great for meal prepping, like in a yummy ​wrap or on top of a salad. So many delicious ways to use​ them.

Chicken Fajitas
  • 2 teaspoons olive oil
  • 1 onion thinly sliced
  • 1 red bell pepper thinly sliced
  • 1 yellow bell pepper thinly sliced
  • 1 32-ounce bag Member’s Mark Chicken Fajitas
  • flour tortillas for serving
  • salsa for serving
  • guacamole for serving
  1. Heat the olive oil over medium heat in a large skillet. Add sliced onion and bell peppers and cook until softened slightly. You still want a bit of a crunch. Transfer to a plate. In the same pan, prepare Member’s Mark Chicken Fajitas according to package instructions.
  2. To assemble fajitas, layer chicken and veggies on on a heated flour tortilla. Top with salsa and guacamole if desired.
