Cashew Chicken Chopped Salad – chicken, veggies, mandarin oranges, and cashews tossed in a sweet and sour dressing! My kids LOVE this salad!
Okay.
I know yesterday I said that I had a monkey bread coming today but I forgot that I wanted to talk about pizza first! So monkey bread Thursday!
And let’s be real, pizza is every bit as exciting as monkey bread.
ANYWAY.
Was your high school football team good?
Because mine wasn’t.
In 4 years, we won 1 game.
ONE.
I mean, the bleachers were always packed and we were so excited for the game every single week, but man, we were terrible.
Curious: if you still live in your hometown, do your kids go to your high school? Do you go to football games with them?
If I still lived in Mobile, I’d totally want my kids to go to Baker and I’d definitely be the obnoxious parent at all the games, even if they are still terrible.
My oldest went to a local high school game with some friends last Friday and it got me thinking all about high school and football.
In exchange for my dear sweet neighbor taking all the kids to the game, I agreed to feed all the boys before they headed out and picked up a couple Tony’s Pizzas at Walmart because I know my kids most favorite pizza is Tony’s® Pizzeria Style MEAT-TRIO® Pizza.
Cashew Chicken Chopped Salad!
While the Tony’s Pizzas were cooking, I made this quick Cashew Chicken Chopped Salad for something fresh on the side.
So simple and so delicious.
I find that if I put a lot of stuff in salads, my boys don’t complain about eating them.
So this one has shredded cabbage (use a bag of cole slaw mix to make your life really easy), shredded carrots, cilantro, green onions, chicken, mandarin oranges and cashews. And then it’s tossed with a sweet and sour dressing made from ingredients that you probably already have in your pantry.

Cashew Chicken Chopped Salad
Ingredients
- 2 cups cabbage, shredded
- 1 cup carrots, shredded
- ¼ cup green onions, sliced
- ¼ cup cilantro, chopped
- 1 cup mandarin oranges, diced
- 1 cup cooked chicken, diced
- ¼ cup cashews, roughly chopped
- salt and pepper
For the dressing:
- 2 tablespoons seasoned rice vinegar
- 1 tablespoon fresh lime juice
- 2 tablespoons fresh orange juice
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- crushed red pepper flakes, to taste
Instructions
- In a large mixing bowl, cabbage, carrots, green onions, cilantro, mandarin oranges, chicken, and cashews.
- In a small bowl, whisk together all dressing ingredients. Pour over the cabbage mixture and toss to combine. Season to taste with salt and pepper.
