I hope you had a relaxing and/or exciting weekend and hopefully Monday won’t be too bad to you.
But just in case, I made us some Pineapple Blackberry Mojitos.
To to Make Pineapple Blackberry Mojitos!
These are really, really easy to make.
You just use the handle of a wooden spoon (or whatever you have) to mash a bunch of blackberries, pineapple, and mint together and then dump in some rum, lime juice, and sparkling water. Throw some ice in and top it with a bunch of mint so it looks fancy. Done.
They are delicous and refreshing and just so pretty to look at! You could totally double or triple the recipe to make a pitcher for a party, too.

- 8 blackberries
- 1/2 cup fresh pineapple diced
- 10 fresh mint leaves
- 1 tablespoon simple syrup
- 2 tablespoons fresh lime juice
- 1/2 cup white rum
- 1/2 cup sparkling water
- lime wedges mint, pineapple, blackberries, optional (for garnish)

Divide blackberries, pineapple, and mint between two glasses. Use the end of a wooden spoon to mash everything together. Put half the simple syrup, lime juice, and rum in each glass. Stir to combine. Add ice and sparkling water. Garnish as desired. Serve immediately.
