Cookies and Cream Cookies - chopped candy bars and white chocolate chips make these cookies extra delicious!

Happy Monday! Let’s make it a great week! Cookies help!

You guys, it has been so HOT here. Yesterday I left at 7:30 am to go to Trader Joe’s (gotta get there before the crowds!) and didn’t need a coat. I wore flipflops. I didn’t even turn my seat warmer on. 

Normally at that time, it’s 20 degrees. Or less. 

Craaaaaaazy. Part of me is super excited because there are few things I hate more than sleeves. But then part of me is so sad that this is our last winter here (for now) and there’s no stinkin’ snow!

Well back to Trader Joe’s. They were out of macarons which is THE WORST. I would’ve settled for the kind I don’t like but they didn’t have a single box of any kind. And I need my cookies. 

So I made these Cookies and Cream Cookies! They have white chocolate chips and those amazing Hershey’s Cookies and Cream bars. Those are probably number 1 on my candy bar list so obviously I’m obsessed with these cookies.

Cookies and Cream Cookies
adapted from Lil Luna
Ingredients
  • 1/2 cup butter softened
  • 1/2 cup vegetable oil
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup Hershey's Cookies and Cream Bars chopped
Instructions
  1. Preheat oven to 350F.
  2. In the bowl of a stand mixer fitted with a paddle attachment, beat butter, oil, brown sugar, and granulated sugar until light and fluffy. Add eggs, one at a time, and beat until combined. Beat in vanilla.
  3. In a separate mixing bowl, whisk together flour, baking soda, baking powder, and salt. Slowly add this mixture to the butter mixture and beat until just combined. Beat in white chocolate chips and chopped Cookies and Cream Bars, in short pulses so you don't break all the chips and bar pieces.
  4. Take 1 tablespoon of dough and roll into a ball. Place on parchment lined baking sheet. Repeat, placing dough about 2 inches apart. Bake for 10 - 12 minutes or until cookies are a light golden brown. Cool on baking sheet for a couple minutes before transferring to a wire rack to cool completely.

    It was 70 here all weekend, which is nice…but we haven’t had a snow all Winter. Kinda disappointing. I am also obsessed with those candy bars…so now I’m obsessed with these cookies. Yum!

    I am so sad there are no Trader Joes near me! But from what I’ve heard maybe that’s a good thing since I would buy all the things! Yummy cookies you have here :)

    If it makes you feel any better Amanda – we’re in the midst of yet another snow storm here in the Boston area…I’d give anything for some 70 degree weather and flip flops! But – I think these delicious cookies of yours would warm things up around here! Love that Cookies & Cream candy and I bet they are great added to cookies!

    It was 70 (!) here in KC yesterday! We had our windows open and were completely enjoying it. We didn’t even know it was february but we weren’t complaining. Kinda like these cookies…I wouldn’t complain!

    Seriously, what is with the weather this year!?! We should have FEET of snow and we have nada.

    So I’m not the only one who hates sleeves? My husband thinks I’m nuts – all winter long I walk around in big jackets and t-shirts because I hate pulling on jackets/sweaters over long sleeves and having the sleeves bunched up at my elbows. (first world problems :) )

    I remember once when I was a kid my older brother bought me one of those cookies and cream candy bars because he was sorry for getting me into trouble. So every time I have one I always think of him…haha. These cookies of course are kick ass and I wish I had some to go with my afternoon coffee…yum!

    I’ll trade you your flip flop weather for our “feels like -9” this morning!! I would have totally been bummed about the lack of macarons also, but these cookies seem like worthy substitutions!
