The first time I ever made these Candied Bacon Chocolate Chip Cookies – over 6 years ago – was the first time I realized what a food blogger weirdo I was.

Food bloggers love bacon.

Okay, yeah, everyone loves bacon but food bloggers love to put bacon in places where bacon usually doesn’t belong.

Cookies, ice cream, rice krispies treats, pretty much everything.

I mean, I have a bacon egg and cheese sandwich on a glazed doughnut pretty much every Saturday morning of my life.

And you can think that’s weird but I have made everyone in my life try them and no one’s complained yet.

Hey guys! Are you shocked that I have more cookies for you?

I’m all cookies, all the time right now.

We have a bunch of new neighbors moving in right now (military community) and I have never been more excited for new people. They’re not even out of their moving trucks before I’m trying to hand tins of cookies to them.

I think baking is officially my favorite thing about the holidays.

I picked up ingredients for these yummy M&M’S® Brownie Cookies recently from the baking aisle at my local Walmart. The Walmart baking aisle has become my home in recent weeks – they have literally everything I need for my holiday baking.

Anyway, so what you need for these cookies is a box of Pillsbury™ Family Size Chocolate Fudge Brownie Mix, Pillsbury™ Creamy Supreme® Vanilla Flavored Frosting, and M&M’S® Brand Minis Milk Chocolate Baking Bits.

And then you need some vegetable oil, eggs, a tiny bit of flour, but that’s it!

Super simple and fuss free!

These cookies are so delicious. The taste of brownies with frosting and M&M’S®? I’m all about them!

Plus, they’re easy enough for my kids to do the bulk of the work. So we got the gift of family time by baking together and then we were able to gift the cookies to our newest neighbors. Sweet treats are definitely two gifts in one!

Are you giving any goodies away as gifts this year? I think everyone in my life is getting cookies and fudge!

M&M’S® Brownie Cookies

M&M’S® Brownie Cookies

Yield: 24 cookies
Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes

Ingredients

  • 1 box Pillsbury™ Family Size Chocolate Fudge Brownie Mix
  • 2 eggs
  • 1/4 cup flour
  • 1/4 cup vegetable oil
  • 1 tablespoon water
  • 1 cup M&M’S® Brand Minis Milk Chocolate Baking Bits, divided
  • 1 can Pillsbury™ Creamy Supreme® Vanilla Flavored Frosting

Instructions

  1. Preheat oven to 375F. Line 2 baking sheets with parchment paper.
  2. In a bowl, beat together brownie mix, eggs, flour, vegetable oil, and water until combined. Fold in about 1/2 of the M&M'S®. Drop by heaping tablespoons onto the prepared baking sheets.
  3. Bake 9 - 10 minutes in the preheated oven, until the tops are crackly. Cool completely.
  4. Spread generously with the frosting and sprinkle with reserved M&M'S®.

Hiiiii guys!

Surviving the week so far? Got stuck in a rainstorm last night. In the Jeep. Without the top on. And if that’s the worst thing that happens to me this week, I’m okay with it.

(I secretly love when that happens.)

Anyway, today I’ve got a fabulous semi-homemade recipe today because that’s what I’m all about right now.

Butterfinger Whoopie Pies - soft Butterfinger cookies with a peanut butter cream cheese filling!

I picked up all the new Nestle Toll House Baking Mixes at my HEB the other day.

Wait, Amanda, you picked up all of them?

Yep.

I like brownies.

And cookies.

What can I say?

So there are 4 varieities: Brownies & More with Butterfingers, Brownies & More with chocolate morsels, Cookies & More with Butterfingers, and Cookies & More with chocolate morsels.

The great thing about these mixes is you can make them as cookies or brownies OR you can use that are your jumping off point and go crazy. Like, the box of Cookies & More with Butterfingers that I used has the recipe for the cookies but it also has a recipe for Cookie Brittle (!) and Banana Snack Cake. Using the mix!

You can turn these mixes into whatever you want!

Another great thing about this line of baking mixes is that they have no artificial flavors or colors. And since it’s from Nestle Toll House, you know you can trust them to put out a premium product.

Butterfinger Whoopie Pies!

For these Butterfinger Whoopie Pies, I used the Cookies & More with Butterfingers and instead of baking them as regular cookies, I added an extra egg and some sour cream to make them super soft whoopie pies. And then I made one of my favorite frostings to put in the middle: peanut butter cream cheese frosting!

Seriously good. It took me forever to truly embrace the whoopie pie but I’m all about them now. They’re, like, a cupcake with better frosting distribution.

Butterfinger Whoopie Pies

Butterfinger Whoopie Pies

Yield: about 12 whoopie pies

Ingredients

  • 1/2 cup 1 stick unsalted butter, at room temperature
  • 2 eggs
  • 1/2 cup sour cream
  • 1 NESTLÉ® TOLL HOUSE® Cookies & More Cookie Baking Mix with Butterfingers

For the peanut butter cream cheese frosting:

  • 1 8 ounce block cream cheese
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350F. Line 2 baking sheets with parchment paper.
  2. Cream softened butter with an electric mixer until light and fluffy. Add eggs and sour cream and beat until combined, scraping down the bowl as needed. Slowly add cookie mix and beat until just combined. Use a rubber spatula to fold in Butterfinger Baking Bits.
  3. Drop by rounded tablespoon onto prepared baking sheets, leaving about an inch between spoonfuls.
  4. Bake 11 - 12 minutes or until cookies are golden brown.
  5. Cool completely before frosting.

To make the frosting:

  1. Beat cream cheese and peanut butter together until no lumps remain. Add vanilla and powdered sugar, slowly, and beat until combined.

I love a giant chocolate chip cookie. Either a chocolate chip cookie cake or a hot, fresh from the oven chocolate chip pizookie topped with vanilla ice cream.

Give me all the huge chocolate chip cookies. 

This is such an easy recipe and cleanup is minimal since I just hand everyone a spoon and serve it right in the cast iron skillet. 

The outside of the pizookie gets browned and crispy and the inside stays soft, a little bit gooey, and so delicious. I love everything about this pizookie.

I cleaned out my pantry the other day (because my real resolution for this year is to declutter) and realized I have a ton of cake mixes. It’s become the “just in case” thing I buy every time I’m at the store because I can never remember if I have white, yellow, chocolate, funfetti, etc. at home. I have somehow collected 15 cake mixes in the 9 months we’ve lived here.

No frosting. Just cake mixes.

So one of my favorite things to do with cake mix is to make cookies. It has to be the easiest way to make cookies! You just need the cake mix, eggs, and oil! Plus whatever you want to mix in!

For this version, I started with a devil’s food cake mix for a rich chocolate cookie and then mixed in chocolate chips and walnuts, like classic fudge.

They are so soft and so delicious! Chocolate cookies are usually my last choice but man, these are good.
