Meyer Lemon Strawberry Shortcakes - the perfect spring dessert!

I know some of you are covered in snow right now (and I’m jealous, trust me) but I have to tell you that it so feels like spring in Texas!

They weather is amazing, the bluebonnets are popping up, and the berries are already so delicious!

I am buying pounds and pounds of fresh berries every time I go to the grocery store and I’m putting them in everything I eat. I can’t get enough. I just want to bake ALL THE THINGS with berries.

Meyer Lemon Strawberry Shortcakes - the perfect spring dessert!

I decided to make these Meyer Lemon Strawberry Shortcakes because I wanted something to pair with my favorite Gloria Ferrer wine.

Gloria Ferrer Caves & Vineyards is Carneros’ original sparkling wine house, owned and founded by the Ferrer family of Spain. The winery opened in 1986 in the breezy, now-famous region in southernmost Sonoma County. Their wines have earned over 400 gold medals and 50 90+ scores in the last 5 years.

My personal favorite Gloria Ferrer wine is the Chardonnay. It’s aged for 9 months in French oak barrels to intense complexity. It has notes of peach, pear, pineapple, and meyer lemon, as well as the delicious toasty oak note.

I thought the bright citrus flavor of the Chardonnay would be perfect with these shortcakes!

If you haven’t baked with meyer lemons yet, you’re definitely missing out! They’re a bit sweeter than regular lemons, a little bit like an orange. I actually caught my 4 year old eating one the other day and couldn’t convince him that it wasn’t an orange!

So the shortcakes themselves have the meyer lemon zest inside and then they are topped with sweetened strawberries! And then you put a big dollop of meyer lemon whipped cream on top to make them extra delicious!

I loved the meyer lemon twist on a classic and they really did pair wonderfully with the Gloria Ferrer Chardonnay.

I love them so much that I wanted to turn them into a delicious cheesecake fruit dip! And you won’t believe how quick and easy this Butterfinger Peanut Butter Cups Cheesecake Dip is!

Only 5 ingredients, too! You just take cream cheese and peanut butter and blend those together until smooth. Add in some powdered sugar and then fold in some whipped topping. Stir in some of the chopped Butterfinger Peanut Butter Cup Minis and you’re are good to go!

I served ours with fresh apple slices, cut strawberries, grapes, and vanilla wafers but I think it would be delicious with other fresh fruit and even pretzel sticks.

How good does that look?! If you’re planning on a fruit tray at your Easter celebration, I definitely recommend making this dip to go alongside! It will definitely be a hit with guests of all ages!

I really love Easter. I never list it when talking about my fave holidays (because people always ask what my favorite holidays are…) but every year I go Easter crazy.

I definitely think it has the best candy, the cutest decorations, and, of course, the best food.

I love a big Easter dinner with ham and mashed potatoes and… okay, I really just care about the ham and mashed potatoes.

Are you ready?

I am SO not and I start panicking and then I remember how last Easter we were living in an Army hotel with all 5 of us plus 2 dogs in one room and that we somehow managed to still pull of an awesome Easter. And I feel a little better about being totally not prepared.

One thing, though, that you can always count on me for is desserts. I am fully prepared to make ALL THE EASTER DESSERTS.

Especially because my pantry is always stocked with Pillsbury baking mixes and frosting. Every time I’m in Walmart, I wander down the baking aisle to see what’s new and while I’m there, I grab a few more boxes of my fave Pillsbury mixes and a few cans of frosting. It’s so nice to have them in the pantry for last minute get togethers or just an afternoon treat.

I think instead of dyeing Easter eggs this year, I may make a ton of cupcakes and decorate those instead! Just as much fun and so much tastier!

And can we talk about how cute these Easter Nest Cupcakes are?! They are so easy – I used my favorite Pillsbury Moist Supreme Cake Mix in chocolate and the Pillsbury Creamy Supreme frosting. And then to decorate, I just place some chocolate sprinkles down in a circle shape to look like a nest and then placed some candy eggs in the center.

So cute. My kids loved this idea and were thrilled to help out with them!
