Easy, healthy, and delicious Paleo Butternut Squash and Bacon Soup is the perfect way to warm up on a winter day.

Paleo Butternut Squash and Bacon Soup - easy, healthy, and delicious soup that's perfect for a cold winter day.

Originally shared on Food Fanatic in November 2017. You can find this Paleo Butternut Squash and Bacon Soup and many others over there!

I have fallen into the routine of making butternut squash soup every single night after the kids are in bed. And then the next day I have soup for breakfast and lunch and then I’m sad when dinner rolls around and there is no more soup left.

Is it possible to be addicted to butternut squash soup?

I literally panicked when I walked into the grocery store the other day to find that they were out of all squash but spaghetti squash. I can’t make a creamy soup with spaghetti squash.

I do several different versions of butternut squash soup (like this coconut curry one or this one with crab!) and most nights I’m just kind of throwing whatever I find in the fridge in. You can’t really go wrong when it comes to a soup like this.

Hi guys.

Should we talk about resolutions? I love a new year and a fresh start and setting up intentions and goals. My current resolution list is just a bunch of tiny things that take up 3 pages of a google doc. They’re mostly like “Quit being super cheap and spend the $15 a month on Audible because you love listening to books while you cook”. Nothing life changing. Just little things that I hope will ultimately add up to make be a better person, better mom, better business woman over time.

I also tend to start eating healthier and cleaner but I think it’s more just getting back to normal. Because from Halloween to New Years, we all indulge a little more than usual, right? It’s less a resolution and more just getting back to what we were doing before we had bags and bags of tiny candy bars in our house at all times.  Click for the full recipe

First post of 2018!

How was New Years? I hope it was safe and fun and you spent it with the people you love.

The boyfriend, who was supposed to be out of town until later this week, surprised me and showed up yesterday afternoon so we got to watch the ball drop together and toast at midnight and all those obnoxious couple things. This was our first New Years together so I’m happy we got to be together.

And oh my gosh, you guys. It snowed last night! Like, actual snow.

Thought I would round out the year with kind of a personal post.

This year was easily one of the hardest years of my life and I don’t know that I’ll ever be ready to talk about the things that happened. I did finally wrap up the divorce – which took 18 months and 4 days, not that I was counting or anything. And everything with the Army is finally wrapped up and that’s the part I’ll probably never be ready to talk about.

The kids and I fell into a routine of it being just us 4 and that’s had it ups and downs. I swear there were weeks when I was in the principals office every other day. But we had lots of adventures along the way. Most importantly, I finally got them to Mardi Gras in New Orleans. I’ve waited for this like most parents wait for their kid’s first Disney trip.

I spent all spring hiking with the husky, all summer at the lake with the boys, and all fall hiking with the husky again. If you’d told me this time last year that I’d start to appreciate Texas, I would have never believed you.

I fell in love with the kind of guy that changes my tire without yelling at me and leaves me cups of hot tea by my bed when I’m sick and I know that probably sounds totally normal to most people but I’ve never had that.

And most importantly, the food! We started our year with puffy tacos in San Antonio and finished the year at a conveyor belt sushi place in Austin that spits out capsule toys when you eat enough sushi. My kids had more pho than chicken nuggets this year, last week my 6 year old ordered lamb at a Halal place, and the lady that owns my favorite sushi restaurant sits with us every time we’re there because she cant believe my 2 younger kids actually eat sushi. I can’t tell you how happy I am to have kids who not only love food, but are willing to try all the interesting restaurants with me (and not order chicken tenders and fries!).

Finally, I want to thank you guys for hanging out with me all year. I’m pretty excited for what’s to come in 2018, both in my life and on the blog. Happy New Year, y’all!
