    Ingredients

    • 1 bag Weight Watchers® Endorsed Jolly Time Healthy Pop microwave
    • 1 ½ teaspoons white balsamic vinegar
    • ½ teaspoon kosher salt

    Instructions

    1. Pop popcorn according to package instructions. Once popped, transfer to a large mixing bowl. Slowly drizzle the vinegar over the popcorn, tossing the popcorn around while you do it. Sprinkle with salt and toss again. Serve immediately.

    One of my favorite people in all of the blogging world, Kita of Girl Carnivore, puts on a Burger Month every year. She recruits a bunch of us burger loving bloggers and literally says to us, “Go crazy!”

    And that’s how I ended up making these Doughnut Burgers with Candied Bacon!

    If you’re into the sweet and salty combo like me, you really should make these. They will change your life.

    The sweet doughnut, the salty bacon coated in brown sugar, the cheese!

    So good.

    You absolutely MUST make them this summer.

    Doughnut Burgers with Candied Bacon - the most amazing burger you'll ever eat! It's the ultimate sweet and salty combination!

    Ingredients

    • Bacon – use your favorite brand/kind of bacon. I think a thick cut pork bacon works best for this burger.
    • Brown sugar – this is for the candied bacon. You don’t HAVE to candy the bacon but it does add a bit more sweetness if you really like the sweet and salty combination.
    • Ground beef
    • Salt and pepper – we’re seasoning these very simply because they have so much going on.
    • Cheddar cheese – you can use another cheese if you prefer but I think the sharpness of cheddar goes really well with the sweetness.
    • Glazed doughnuts – from your favorite doughnut shop.

    How To Make Doughnut Burgers

    • Make candied bacon. Place bacon in a single layer on a foil lined sheet. Sprinkle brown sugar on top of bacon strips. Bake at 350F for 18-25 minutes or until crispy, making sure to turn bacon over after 10 minutes. Remove from oven and place on a wire rack for cooling.
    • Make burgers. Divide ground beef into 4 portions, shape into burger patties, and season with salt and pepper.
    • Grill. Grill to desired doneness, putting cheese on top to melt shortly before removing them.
    • Assemble. Top each split doughnut with a cheesy burger and 2 slices of candied bacon, torn in half.

    Ingredients

    For the candied bacon:

    • 8 slices bacon
    • ½ cup brown sugar
    • For the burgers:
    • 1 pound ground chuck
    • salt and pepper
    • 4 slices cheddar cheese
    • 4 glazed doughnuts, cut in half like a burger bun

    Instructions

    1. To make the candied bacon, preheat oven to 350F. Place bacon in a single layer on a foil lined sheet. Sprinkle brown sugar on top of bacon strips. Bake for 18-25 minutes or until crispy, making sure to turn bacon over after 10 minutes. Remove from oven and place on a wire rack for cooling.

    Today I’m heading up to Salt Lake City (OMGMOUNTAINS! I might just stay forever!) for a conference so I have to stick with my tradition of posting a cocktail on days when I fly.

    I actually really enjoy flying but I’m also that person that has a minor panic attack with every bump. Which is why we talk cocktails on days that I fly. Because I’ll probably spend most of the flight wishing I had one.

    The conference is going to be so much fun though. I’m rooming with my bestie Nicole and we coordinated our flights so that we land at the same time and can navigate SLC together. And there is going to be SO MUCH FOOD. I plan on gaining at least 10 pounds.

    This is the easiest fancy-ish cocktail you’ll ever make. The rosemary makes it fancy, right?

    I think so. Rosemary makes everything look fancy.

    It’s just pineapple, rosemary, a bottle of sparkling wine, and some ginger ale. That’s it! It’s so pretty and so tasty and perfectly refreshing for hot summer days.

    Ingredients

    • Fresh pineapple – I recommend making this with really ripe, bright yellow pineapple so you get all the sweetness of the pineapple.
    • Fresh rosemary – don’t try to use dried rosemary in this recipe.
    • Sparkling wine – any sparkling white wine will work in this recipe. You could also use champagne.
    • Ginger ale – you can use diet ginger ale to make this drink a little lighter.

    How To Make Pineapple Rosemary Crush

    • Muddle. Use a muddler to muddle 2 chunks of pineapple with one sprig of rosemary in the bottom of a cocktail glass until juicy and fragrant.
    • Combine. Fill with ice, and then pour over a generous ⅓ cup wine and top off with ginger ale.
    • Serve. Garnish with rosemary and serve immediately.

    Ingredients

    • 2 cups fresh pineapple chunks, plus more for garnish
    • 8 small sprigs rosemary, plus more for garnish
    • 1 (750 ml) bottle sparkling wine, chilled
    • 2 (12 ounce) cans ginger ale, chilled

    Instructions

    1. For each drink, use the handle of a wooden spoon to muddle 2 chunks of pineapple with one sprig of rosemary in the bottom of a cocktail glass until juicy and fragrant.
    2. Fill with ice, and then pour over a generous ⅓ cup wine and top off with ginger ale. Garnish with rosemary and serve immediately.

    Coconut Oil Chocolate Chip Cookies

    Coconut Oil Chocolate Chip Cookies are made with coconut oil instead of butter. They are soft and chewy with just a hint of coconut.

    Coconut Oil Chocolate Chip Cookies - use coconut oil instead of butter in these delicious cookies! This is my favorite chocolate chip cookies recipe!

    I made these cookies a few weeks ago because I was out of butter and don’t you always crave cookies when you’re out of butter?

    And, of course, it was the weekend so I wasn’t about to take all 3 kids to the grocery store just for butter.

    Coconut oil makes excellent cookies though! Seriously, my new favorite recipe. The coconut oil gives just the tiniest hint of coconut to the cookies. And they’re perfect if you’re dairy-free – just make sure the chocolate chips or chunks you use are also dairy free!

    Ingredients

    • Coconut oil – this is the substitute for butter. It gives the cookies a nice coconut flavor and makes them slightly crunchier than a cookie made with butter.
    • Brown sugar
    • Granulated sugar
    • Eggs
    • Vanilla
    • All-purpose flour
    • Baking soda
    • Salt
    • Semisweet chocolate chunks or chips

    How To Make Coconut Oil Chocolate Chip Cookies

    • Wet ingredients. Beat together coconut oil, brown sugar, and granulated sugar. Add eggs and vanilla.
    • Dry ingredients. Whisk together flour, baking soda, and salt.
    • Combine. Add dry mixture to the wet ingredients and beat until just combined.
    • Add chocolate. Stir in chocolate chunks.
    • Bake. Bake at 350F for 11 – 13 minutes or until golden brown.
    • Cool. Cool a few minutes on the sheets before transferring to a wire rack to cool completely.

    How Long Are They Good For?

    These coconut oil chocolate chip cookies are good for up to 4 days. Make sure to store them in an airtight container at room temperature.

    Can You Freeze Them?

    You can freeze these cookies for up to 3 months. I would wrap them tightly in plastic wrap and then place in a freezer ziploc bag.

    When you are ready to eat, let them sit at room temperature until defrosted.

    • 1 cup coconut oil
    • 1 cup brown sugar
    • ½ cup granulated sugar
    • 2 eggs
    • 2 teaspoons vanilla
    • 3 cups all-purpose flour
    • 2 teaspoon baking soda
    • ½ teaspoon salt
    • 2 cups semisweet chocolate chunks, or chips

    Instructions

    1. Preheat oven to 350F. Line 2 baking sheets with parchment paper.
    2. In a large mixing bowl, beat together coconut oil, brown sugar, and granulated sugar until light and fluffy. Add eggs and vanilla and beat until thoroughly mixed.
    3. In a separate bowl, whisk together flour, baking soda, and salt. Add this mixture to the wet ingredients and beat until just combined. Stir in chocolate chunks.
    4. Bake 11 - 13 minutes or until golden brown, rotating the baking sheets halfway through. Cool a few minutes on the sheets before transferring to a wire rack to cool completely.
    5. Repeat with remaining dough.

    I celebrated a special anniversary this weekend.

    One of my besties has lived with me for a year now:

    Can you believe it’s been a year since I stalked the rescue group for a week before deciding to go pick her up?!

    In the last year she’s… broken her leg, roadtripped through Texas, Louisiana, Mississippi, and Alabama, torn up a lot of cardboard boxes, grown 3 times the size the vet thought she’d be, and walked around the neighborhood approximately a million times.

    Peanut Butter Dog Doughnuts - easy baked doughnuts with all dog-friendly ingredients like peanut butter, honey, bananas, and Greek yogurt! 

    Ingredients for Dog Donuts

    • Creamy peanut butter – make sure to use a a peanut butter that does not contain xylitol as it can really harm your dog. I like to use Crazy Richard’s brand because the only ingredient is peanuts.
    • Vegetable oil
    • Bananas – this helps to sweeten the doughnuts.
    • Honey – this also helps to sweeten the doughnuts.
    • Egg
    • All-purpose flour – you could use whole wheat flour if you prefer.
    • Baking soda
    • Baking powder
    • Greek yogurt – this is the frosting. It gets sweetened with a little bit of honey.
    • Dog treats – this is optional, for decorating the top.

    Instructions

    • Wet ingredients. Beat peanut butter, vegetable oil, banana, honey, and egg together.
    • Dry ingredients. Whisk together flour, baking soda, and baking powder.
    • Combine. Add dry mixture to wet mixture and beat until just combined.
    • Shape. Transfer to a ziploc bag and cut off a corner of the bag; pipe the batter into a doughnut pan sprayed with baking spray.
    • Bake. Bake 8 – 10 minutes at 350F.
    • Cool. Cool on a wire rack before frosting.
    • Make frosting. Stir together Greek yogurt and honey
    • Top. Spread the frosting on cooled doughnuts and sprinkled chopped dog treats on top.

    How Long Are They Good For?

    These dog doughnut are good for up to 4 – 5 days. Store them in an airtight container in the fridge. I don’t think your dog will care if they’re cold or not so you can serve them right from the fridge.

    Can You Freeze Dog Donuts?

    Yes, you can freeze these doughnuts but I would freeze them without the frosting on top. Wrap each donut individually in aluminum foil and then put the doughnuts a freezer ziploc bag. 

    They’ll be good in the freezer for up to 3 months. 

    To defrost, just leave them at room temperature overnight. And then you can frost and serve them.

    Ingredients

    For the doughnuts:

    • ¼ cup creamy peanut butter
    • ¼ cup vegetable oil
    • 1 medium bananas, mashed
    • ⅓ cup honey
    • 1 egg
    • 1 cups all-purpose flour
    • 1 teaspoon baking soda
    • ½ teaspoon baking powder

    For the frosting:

    • ½ cup plain Greek yogurt
    • 1 tablespoon honey
    • smashed dog treat, for topping

    Instructions

    1. Preheat oven to 350F. Spray a doughnut pan with baking spray.
    2. Beat peanut butter, vegetable oil, banana, honey, and egg until combined.
    3. In a separate bowl, whisk together flour, baking soda, and baking powder. Slowly add the dry mixture to the wet ingredients and beat until just combined.
    4. Transfer the mixture to a ziploc bag, snip off a corner, and pipe the mixture into the doughnut pan. They should be about ¾ full.
    5. Bake 8 - 10 minutes or until browned and a toothpick inserted into doughnuts comes out clean. Invert onto a wire rack to cool completly.
    6. Repeat with remaining batter.
    7. To make the frosting, stir together the Greek yogurt and honey. Spread the frosting onto cooled doughnuts and sprinkle the smashed dog treats on top.

    Raspberry Margaritas

    It occurred to me yesterday that I didn’t make a single recipe in preparation for Mother’s Day so I’m also pitching these Raspberry Margaritas as the perfect thing to make for your mom this Sunday.

    I mean, moms love margaritas, right?

    Frozen margaritas are so easy because you literally just pour everything in a blender and press go. So you just throw your tequila, Triple Sec (or orange liqueur of choice), fresh or frozen raspberries, lime juice, and ice into your blender and blend until smooth. 

    There’s no “Do you shake or stir margaritas?” google search necessary.

    There’s no fussy muddling of raspberries happening here.

    I love drink recipes like that.

    Then, you just top it off with sliced limes, fresh raspberries, and a salted rim if that’s your thing. 

    Frozen Raspberry Margaritas - an easy 4 ingredient recipe for the perfect poolside drink! Fresh or frozen raspberries are blended with tequila, orange liqueur, and fresh lime juice.

    Ingredients

    • Tequila – use your favorite brand of tequila.
    • Orange liqueur – such as Triple Sec.
    • Limes – you are going to be using the juice in the margarita and lime wedges to garnish the finished margaritas.
    • Raspberries – save a few to go on top of the margaritas!
    • Ice

    How To Make Raspberry Margaritas?

    • Make margaritas. Blend tequila, Triple Sec, lime juice, raspberries, and 2 cups ice in a blender until smooth.
    • Adjust. Add more ice if necessary to reach desired texture.
    • Serve. Pour into 2 glasses and garnish with raspberries and lime wedges.

    Can You Make Frozen Margaritas Ahead?

    Yes! If you’re prepping for a party (or just want a stash of margaritas in the freezer) you can definitely make a batch ahead of time and store it in the fridge. I like to store them in small single serving mason jars so that I can pull them out as needed.

    And also, if you store them in jars, you can call them Jargaritas and that’s just too cute to not do. 

    Make sure to leave about ½-inch at the top of the jar to account for any expanding the margarita might do. 

    These will last for months in the freezer. If they seem a little too frozen at first, just let them sit on the counter for a few minutes and then give them a good stir.

    So how was the weekend? It monsooned here in Texas. My entire house filled with a burning smell during the storm and that caused me to call maintenance out here at 11 pm on Friday night and, OF COURSE, the smell was gone by the time they got here.

    The maintenance guy was like, “Oh yeah, your neighbor’s car got struck by lightning… so maybe that was it.”

    Texas, man.

    Anyway, we had a few sunny moments this weekend, too. I threw some water balloons at the kids, ate a lot of cookies, and made this delicious Queso Fundido.

    So what is Queso Fundido? Well it translates to “melted cheese” so…

    But it’s also made with chorizo and I looooove chorizo.

    I had a 10 minute conversation with the HEB cashier about all the ways we love to use chorizo when I was buying the ingredients for this. Ten minutes. About chorizo.

    Ingredients

    • Olive oil
    • Onion
    • Jalapeno – adjust the number of jalapenos to your spice preference.
    • Chorizo
    • Beer – a Mexican lager is my preferred beer for this but use what you have. I wouldn’t use an IPA or something really dark like Guinness.
    • Mexican melting cheese – like asadero or quesadilla. These melt really well but if you don’t have access to them, a sharp white cheddar will be fine.
    • Tomato – this is for garnish.
    • Cilantro – also for garnish so if you aren’t a cilantro person, leave it out.

    How To Make Queso Fundido

    • Cook. In an oven-proof skillet, cook onion, jalapeno, and chorizo in olive oil over medium-high heat.
    • Add beer. Add ½ beer and stir to get the browned bits off the bottom.
    • Set aside. Remove about ½ cup of the chorizo mixture to a bowl.
    • Add cheese. Turn off the heat and stir in the cheese.
    • Top. Spoon the reserved chorizo mixture into the center of the skillet.
    • Bake. Cover with aluminum foil, and bake at 350F for about 10 minutes.
    • Garnish. Top with chopped tomato and cilantro before serving with tortilla chips.

    How Long Is It Good For?

    Queso fundido is good for up to 3 days. Make sure to store it in an airtight container in the fridge.

    Reheat in the microwave when you are ready to serve.

    Queso Fundido

    Queso Fundido is spicy cheese dip with chorizo! Serve with tortilla chips for the perfect party snack!

    Ingredients

    • 1 teaspoon olive oil
    • 1 onion, diced
    • 1 small jalapeno, diced
    • 8 ounces chorizo
    • ½ - 1 cup beer
    • 4 cups shredded Mexican melting cheese, like asadero or quesadilla
    • 1 roma tomato, chopped
    • ½ cup cilantro, chopped

    Instructions

    1. Preheat oven to 350F.
    2. In an oven-proof skillet, melt coconut oil over medium-high heat. Add onion, jalapeno, and chorizo to the pan; cook, breaking up the chorizo, until onion is translucent and chorizo is cooked through. Add ½ beer and stir to get the browned bits off the bottom. Remove about ½ cup of the chorizo mixture to a bowl. Turn off the heat and stir in the cheese. Add more beer if the mixture gets too thick. Spoon the reserved chorizo mixture into the center of the skillet, cover with aluminum foil, and bake in the preheated oven for about 10 minutes or until the cheese in completely melted.
    3. Top with chopped tomato and cilantro before serving with tortilla chips. Serve hot!

    I know. It’s way too early in the morning to be talking about things like tater tot casseroles.

    I’m sorry.

    I was sick all weekend – all weekend! – and didn’t have time to get a bunch of yummy things baked and photographed. I made this banana bread crumb cake and it’s delicious and amazing but I couldn’t stop coughing long enough to take pictures. Being sick is the worst.

    Ingredients

    • Olive oil – you can use whatever your preferred cooking oil is.
    • Ground beef – you can substitute ground chicken or ground turkey to keep it a litte bit lighter.
    • Salt and pepper
    • Sloppy joe sauce – the canned kind or if you have a favorite homemade recipe, try that!
    • Cream of mushroom soup – the fat free version works fine in this recipe.
    • Cheddar cheese – you can’t have tater tot casserole without cheese! I like a sharp cheddar but use your favorite cheddar.
    • Tater tots – the most important part of tater tot casserole! You can use the traditional tater tots (like I used here) or the crispy rounds.

    How To Make Sloppy Joe Tater Tot Casserole

    1. Cook beef. Heat oil over medium heat in a large skillet. Brown ground beef, breaking it up, until no pink remains. Drain, return to pan, and season with salt and pepper.
    2. Make sloppy joe mixture. Add sloppy joe sauce and cream of mushroom sauce to the ground beef. Stir until everything is combined.
    3. Assemble casserole. Pour mixture into a 9×13-inch pan. Top with sharp cheddar cheese. Arrange tater tots on top.
    4. Bake casserole. Bake at 350F for about 25 – 30 minutes or until tater tots are cooked and golden brown. Serve hot!

    How Long Is It Good For?

    This casserole is good for up to 3 days. Make sure to cover it tightly and store it in the refrigerator.

    I like to reheat tater tot casserole in the oven or toaster oven so that the tater tots get a little crispiness to them again.

    Can You Freeze It?

    You can freeze this casserole for up to 3 months. Make sure you use a freezer-safe, airtight container.

    When you are ready to bake, you can bake straight from frozen but you will need to add extra baking them. Just keep an eye on it – you want the tater tots browned and the filling bubbly.

    If you have time, let it thaw overnight in the fridge and then back it according to the recipe instructions.

    Blue Margaritas

    Can you even believe the color of these Blue Margaritas?! Just 5 ingredients! Perfect for Cinco de Mayo or poolside all summer long!

    My fave Mexican place back in Colorado Springs (3 Margaritas on Powers!) had the best blue curacao margaritas and I have been dying to make some ever since we moved down here.

    So really, Blue Margaritas don’t taste that different from the classic but they’re so pretty! The blue comes from the curacao which tastes a lot like Triple Sec and is mostly there just for the color.

    Also, it’s quite cheap at the liquor store so don’t let the 3 different types of booze scare you away from making this one.

    Definitely add it to your Cinco de Mayo plans – your friends and fam will love it!

    Blue Margaritas - the prettiest drink for your Cinco de Mayo party or perfect poolside all summer long. Just 5 ingredients!

    Ingredients

    • Coarse salt – this is for the rim. If you don’t like a salty rim on a margarita, just skip this ingredient.
    • Tequila – I recommend a silver tequila for this recipe.
    • Triple Sec – you can use any orange liqueur that you prefer
    • Blue curacao – this is an orange flavored liqueur that gives the drink it’s blue color.
    • Fresh lime juice
    • Simple syrup – you can make your own simple syrup or buy it at any liquor store and most grocery stores.
    • Lime wedges – these are used for rimming the glasses and for garnishing.

    How To Make Blue Margaritas

    • Rim glasses with salt. Using 1 lime wedge for each glass, rub each rim. Dip rim in a plate of salt.
    • Shake. Combine tequila, Triple Sec, blue curacao, lime juice and simple syrup in shaker, fill with ice cubes, and shake vigorously for 30 seconds.
    • Strain and serve. Strain the margarita into glasses filled with ice. Garnish with lime wedges if desired.

    How To Make Frozen Blue Margaritas

    To make these into frozen blue margaritas, after shaking the ingredients, blend them with ice until it reaches your desired consistency.

    What Flavor Are Blue Margaritas?

    Blue margaritas taste like regular lime margaritas for the most part. They do have 2 types of orange flavored liqueur in them so you may be able to taste a bit more of an orange flavor.

    Ingredients

    • 1 graham cracker crust
    • 1 cup sugar
    • ¼ cup cornstarch
    • ½ teaspoon salt
    • 3 cups milk
    • 2 large eggs, lightly beaten
    • 3 tablespoons butter
    • 1 ½ teaspoons vanilla extract
    • 2 large bananas, sliced
    • 2 cups heavy whipping cream
    • 2 tablespoons powdered sugar

    Instructions

    1. In a large saucepan, stir together sugar, cornstarch, salt and milk over medium-high heat until bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from heat. Whisk a small amount of hot filling into eggs; return all to pan. Bring to a gentle boil; cook and stir 2 minutes longer.
    2. Remove from heat. Stir in butter and vanilla. Transfer to a bowl and press plastic wrap onto surface of custard to stop a film from forming; refrigerate, covered, until cool.
    3. Spread half of the custard into the graham cracker crust. Top with sliced bananas. Spread remaining custard over the bananas, smoothing out the top.
    4. Beat the heavy whipping cream and powdered sugar until soft peaks form. Spread over the pie. Store in fridge until ready to serve.

    I feel like I’ve been so behind on holidays this year. I didn’t post a single Mardi Gras recipe, I think I posted one for Easter, and I can’t name another holiday that’s passed to save my life.

    It’s safe to say that if there were more, I definitely missed them.

    But I will not miss Cinco de Mayo! We’re starting a couple weeks early so I can squeeze in all the margaritas and melted cheese I can come up with.

    I’ve been obsessed with watermelon for the last couple summers and it looks like it will be continuing this year since I couldn’t wait to share these Watermelon Mint Margaritas with you!

    They’re really easy and yes, they start with fresh watermelon. No fake stuff here! 

    I bet they would be delicious next to a pool or on the beach or basically anywhere that it’s hot! And look how pretty they are!

    How To Make Watermelon Mint Margaritas

    • Use a blender to combine watermelon, lime juice, tequila, and mint simple syrup (instructions below)
    • Divide into 2 glasses filled with ice
    • Garnished with mint leaves and lime wedges

    How To Make Mint Simple Syrup

    • Bring sugar and water to a boil 
    • Stir until sugar is dissolved
    • Remove from heat and stir in mint leaves
    • Let steep for 10 minutes
    • Remove mint leaves and let cool
    • Store in refrigerator

    How Long Is Simple Syrup Good For?

    This simple syrup will be good for up to 3 – 4 weeks in the fridge. I always store mine in a little mason jar and then add it to pretty much any cocktails we make. You can’t really go wrong adding mint to drinks.

    2. In a blender, combine watermelon, lime juice, tequila, and half of the mint syrup (use more if you like a sweeter drink). Blend until smooth.

    Glazed Lemon Cookies

    Happy Monday! Errr… let’s try to make it a happy Monday!

    I have cookies to make your Monday a little less horrible.

    Yep, still really loving all things lemon right now. I don’t know what my deal is but I can’t get enough.

    I made these Glazed Lemon Cookies yesterday and then ate 5 of them before I even took pictures. It’s a problem.

    They turn out perfectly soft and the glaze on top is just the right amount of sweet!

    Ingredients

    • All-purpose flour
    • Baking soda
    • Salt
    • Lemons – you will be using the zest and the juice from the lemons.
    • Butter
    • Granulated sugar
    • Egg
    • Vanilla
    • Powdered sugar – this is for the glaze.

    How To Make Glazed Lemon Cookies

    • Dry ingredients. Whisk together flour, baking soda, salt, and lemon zest to remove lumps.
    • Wet ingredients. Beat butter and granulated sugar. Add egg, vanilla, and lemon juice.
    • Combine. Add dry mixture to wet mixture and beat until combined.
    • Transfer. Roll dough into tablespoon-size balls and place 2 inches apart on baking sheets.
    • Bake. Bake at 350F until edges are golden, 15 to 20 minutes.
    • Cool. Cool completely before glazing.
    • Make the glaze. Whisk together powdered sugar, lemon zest, and lemon juice until smooth.
    • Glaze cookies. Dip the top of the cookies into the glaze and let set for about an hour before serving.

    How Long Are They Good For?

    These glazed lemon cookies will be good for up to 4 days. Make sure to store them in an airtight container at room temperature.

    Can You Freeze Them?

    You can freeze these cookies for up to 3 months. I would wrap them tightly in plastic wrap and then place them in a freezer ziploc bag.

    When you are ready to enjoy them, let them sit at room temperature until defrosted.

    • ½ cup 1 stick unsalted butter, room temperature
    • 1 cup granulated sugar
    • 1 large egg
    • 1 teaspoon vanilla

    For the glaze:

    • 2 cups powdered sugar
    • 2 tablespoons finely grated lemon zest
    • ⅓ cup fresh lemon juice

    Instructions

    1. Preheat oven to 350F. Line 2 baking sheets with parchment paper.
    2. In a mixing bowl, whisk together flour, baking soda, salt, and lemon zest to remove lumps.
    3. In a separate bowl, use an electric mixer to beat butter and granulated sugar until light and fluffy. Add egg, vanilla, and lemon juice and beat until combined. With mixer on low, beat in flour mixture.
    4. Roll dough into tablespoon-size balls and place 2 inches apart on baking sheets.
    5. Bake until edges are golden, 15 to 20 minutes, rotating sheets halfway through. Let cool 2 minutes on sheets, then transfer cookies to a wire rack to cool completely.
    6. To make the glaze, whisk together powdered sugar, lemon zest, and lemon juice until smooth. Dip the top of the cookies into the glaze and let set for about an hour before serving.

    Ugggghhhh.

    I hope you had a relaxing and/or exciting weekend and hopefully Monday won’t be too bad to you.

    But just in case, I made us some Pineapple Blackberry Mojitos! They are quick, easy, and the most refreshing summer cocktail. 

    Love pineapple drinks as much as I do? Try Pineapple Rosemary Crush or Pineapple Lemonade Sangria!

    I also have Blackberry Margaritas if you prefer berries!

    Pineapple Blackberry Mojitos - the BEST summer cocktail recipe! Pineapple, blackberries, and mint are crushed and then mixed with rum, lime juice, and sparkling water!

    Ingredients for Pineapple Blackberry Mojitos

    • Blackberries
    • Pineapple
    • Fresh mint leaves
    • Simple syrup – this is a sweetener made from equal parts water and sugar. You can make it yourself or buy it at a liquor store or some grocery stores. You can also order it online.
    • Fresh lime juice
    • White rum
    • Sparkling water
    • lime wedges, mint, pineapple, blackberries – optional, for garnish

    How To Make Pineapple Blackberry Mojitos

    • Use a muddler or the end of a wooden spoon to mash together blackberries, pineapple, and mint in a glass
    • Add simple syrup, lime juice, and white rum to the glass
    • Stir to combine
    • Add ice and sparkling water
    • Garnish as desired and serve immediately

    Can You Make Them Ahead?

    I don’t recommend you make mojitos ahead of time. You want them to be fresh and bubbly.  

    The good news is that since the drinks themselves are made in the serving glasses, they take almost no time to put together!

    You can prep them ahead by slicing the fresh pineapple in wedges, squeezing the lime juice and cutting the limes into wedges, and pulling mint leaves off the stems! That will make the process even easier.

    • 10 fresh mint leaves
    • 1 tablespoon simple syrup
    • 2 tablespoons fresh lime juice
    • ½ cup white rum
    • ½ cup sparkling water
    • lime wedges, mint, pineapple, blackberries, optional (for garnish)

    Instructions

    1. Divide blackberries, pineapple, and mint between two glasses. Use the end of a wooden spoon to mash everything together. Put half the simple syrup, lime juice, and rum in each glass. Stir to combine. Add ice and sparkling water. Garnish as desired. Serve immediately.

    You guys, I’m obsessed with Funfetti right now. I can’t get enough. I’ve made cookies, cupcakes, bars, everything in the past few weeks. The sprinkles just make me so happy!

    Funfetti Cake Mix Cookies

    Funfetti Cake Mix Cookies
    Prep Time 15 minutes
    Cook Time 8 minutes
    Total Time 23 minutes

    Ingredients

    • 1 box Pillsbury Moist Supreme Funfetti cake mix
    • ⅓ cup oil
    • 2 eggs
    • 1 can Pillsbury Creamy Supreme Funfetti Frosting

    Instructions

    1. Preheat oven to 375. Line 2 baking sheets with parchment paper.
    2. In a large mixing bowl, stir together cake mix, oil, and eggs until combined. Roll into 1 inch balls, flatten slightly, and place 2 inches apart on the prepared baking sheets.
    3. Bake 6 - 8 minutes or until lightly golden brown. Cool completely before frosting with the Funfetti frosting.

    Happy Thursday!

    We’ve almost made it through the week, guys! We’re almost done!

    Let’s make tacos and put Pineapple Salsa on them.

    Taco Thursday could be a thing, right?

    Also, do you want to talk about how I’ve had Taco Bell breakfast TWICE this week? It’s a problem. I won’t even snapchat it because I’m so ashamed of myself.

    Pineapple Salsa - perfect on tacos, burritos, or just with tortilla chips! Really easy and really delicious!

    Anyway.

    I made this carnitas recipe earlier in the week and have been serving it on corn tortillas with a ton of pineapple salsa on top and it is so beyond perfect.

    If you’ve never made salsa, it’s so easy you won’t even believe this. You don’t even have to find your blender for this one.

    It’s just fresh pineapple, cilantro, red onion, and jalapeno tossed with fresh lime juice and a tiny bit of salt. You can throw it together in just a few minutes. Serve it with tortilla chips, put it on tacos, make burrito bowls, do whatever! It will be delicious with pretty much anything.

    Unrelated: who’s your Survivor winner pick? Mine is Cydney. I almost always choose a woman (last season being the exception – I love Fishbach!) and I hope to be Cydney when I grow up.

    Ingredients

    • 2 cups fresh pineapple, diced
    • ½ cup cilantro, chopped
    • ¼ cup red onion, finely diced
    • 1 jalapeno, minced (use less for less heat)
    • ¼ teaspoon salt
    • juice of 1 lime

    Instructions

    1. Combine all ingredients in a bowl and stir to combine. Store in refrigerator until ready to serve.
