    How do you feel about dyeing egg?

    I’m an only child so dyeing eggs was fun for me. I got to do all the eggs my mom was willing to sacrifice to the cause, I didn’t have to fight with anyone over colors, no one wanted to chitchat as I expertly drew “I <3 [insert random boy name] with the clear crayon on each and every egg.

    I have 3 kids.

    Which means I’m buying 3 of the exact same kit because lord knows I wouldn’t survive buying 3 different ones because someone will definitely feel like they lost out by not getting the glittery dinosaur kit. And I can’t just buy one kit and have them share. That would be even worse.

    And the anxiety I feel by having 12 cups of colored water on my counter with 3 boys flailing around?

    Nope.

    We dye eggs every year though. I’m yelling “I’m doing this alone next year!” by the end, but at least I do it, right?

    The other thing about having 3 kids is that you end up with a lot of hard boiled eggs at the end of it. And we’re not hard boiled egg people. There’s no way 18 hard boiled eggs are getting eaten in my house.

    So I always do deviled eggs. Because for some reason, 18 hard boiled eggs will get eaten, fought over, and possibly even cried about if you turn them into deviled eggs.

    And these Bacon Pimento Cheese Deviled Eggs are game changers.

    I love pimento cheese. I loooooove it. My favorite thing to do is dip those giant pretzel rods in pimento cheese. So naturally, I look for other ways to use it.

    These eggs are pretty standard but you mix in pimentos, cheddar cheese, and bacon.

    So good, you guys.

    If you don’t like pimentos, skip it and just do bacon and cheddar eggs. They will still be delicious!

    Bacon Pimento Cheese Deviled Eggs

    Prep Time 20 minutes
    Cook Time 10 minutes
    Total Time 30 minutes

    Ingredients

    • 6 large eggs
    • 2 - 3 tablespoons mayo
    • 2 teaspoons dijon mustard
    • ¼ teaspoon garlic powder
    • ¼ teaspoon onion powder
    • 2 teaspoons diced pimentos, plus more for garnish
    • 2 teaspoons dill pickle relish
    • ¼ cup shredded cheddar cheese
    • 2 slices bacon, cooked and crumbled
    • salt and pepper

    Instructions

    1. Boil a large pot of water. Add eggs and boil for 10 minutes. Carefully remove from water and transfer to a large bowl filled with ice water. Peel when cool enough to handle.
    2. Slice each egg in half and transfer the yolks to a mixing bowl.Stir in 2 tablespoons mayo, mustard, onion powder, garlic powder, pimentos, and pickle relish. Add the remaining tablespoon of mayo if it seems too thick. Fold in cheddar cheese and most of the bacon. Season with salt and pepper to taste. Spoon into the egg whites and sprinkle with bacon and pimentos, if desired.

    Honey Ham Biscuits

    Honey Ham Biscuits are a delicious way to use leftover ham. Refrigerated biscuits filled with sliced ham and Swiss cheese and brushed with honey butter!

    The kids went back to school yesterday.

    Hallelujah.

    I did as every mom does after a solid 10 days with no break.

    I got a spray tan and then drove an hour to the nearest Whole Foods for coconut flour tortilla chips and a bag of vegan peanut butter M&Ms.

    Boyfriend was all, “You go to the coffee shop to work this morning?”

    Umm.

    Yeah, totally.

    Anyway, I knocked out, like, 10 recipes last week while they were home and asking a billion questions every minute of the day so you better believe I have a yoga class scheduled this morning and then plan to spend at least 3 hours strolling around the library.

    Might even sit in my car and watch Instagram stories without interruption for awhile before driving home.

    Ingredients

    • Refrigerated biscuits – the ones in a can that say “flaky layers”. You want to be able to pull them in half.
    • Sliced ham – you can use deli ham or if you have leftover ham from a baked ham, use that!
    • Swiss cheese – you could also use a provolone or anything cheese that doesn’t have a super sharp flavor.
    • Butter – this is going on the biscuits to make sure they are extra bubbly and delicious. This is also help them get that gorgeous golden brown color in the oven.
    • Honey – after the biscuits are baked, you are going to brush the honey on them.

    Instructions

    • Prepare. Preheat oven to 400F. Line a baking sheet with parchment paper
    • Prep biscuits. Separate each biscuit into 2 layers, placing the bottom halves on the prepared baking sheet
    • Add ingredients. Top the bottoms with a pile of Swiss cheese and ham
    • Top. Place top of biscuits on top
    • Add butter. Brush tops with melted butter
    • Bake. Bake for 12 – 15 minutes or until the biscuits are golden brown
    • Brush with honey. Warm the honey in the microwave just until liquid; brush on top of biscuits as soon as they come out of the oven

    What Kind Of Ham Should I Use?

    You can use deli-sliced ham or slices of ham that you baked!

    How Long Are They Good For?

    Honey Ham Biscuits are good in the fridge for up to 3 – 4 days. I recommend wrapping them individually in plastic wrap and then placing them in freezer ziploc bags or an airtight container.

    When you want to serve them, remove all plastic wrap and microwave for about a minute.

    What To Serve With Them?

    I love making these for an easy breakfast so I keep the rest of breakfast easy too. Just fresh cut fruit or maybe Marshmallow Fruit Salad.

    If you are serving them for a brunch, a batch of Mimosas always go well!

    • 1 10- count can of biscuits, with layers
    • ½ pound thinly sliced ham
    • 1 cup swiss cheese, shredded
    • 2 tablespoons butter, melted
    • 2 tablespoons honey

    Instructions

    1. Preheat oven to 400F. Line a baking sheet with parchment or spray with oil.
    2. Separate your biscuits into 2 layers; placing the bottom halves on your prepared baking sheet. Top with a mound of swiss cheese and ham. Place top of biscuit on top. Brush the tops with the melted butter.
    3. Bake for 12 - 15 minutes or until golden brown. Warm the honey in the microwave just until liquid. Brush on top of biscuits as soon as they come out of the oven. Serve hot!

    We’re not going to talk about this crust.

    Okay, fine, we’ll talk about it.

    So I didn’t use my regular crust recipe because it calls for, like, 5 cups of flour and this was Spring Break and I’m not about to take all my kids to the grocery store for flour. So I used a recipe that sounded delicious – I mean, honey wheat pizza crust? That only needs 2 ¾ cups of flour?

    Sold.

    It did taste good but it looked like that. And I brushed it with olive oil and I left it in the oven past the point I like my cheese melted but it still looks all pale and sad. And it cracked weird which probably means I had too much flour or I should’ve added that extra tablespoon of olive oil to the dough or something that won’t hurt my feelings if you tell me.

    For reference, I usually use the King Arthur Flour pizza dough recipe. And sometimes I pre-bake it and sometimes I don’t because I’m still not sure how to get a crispy, browned crust if I don’t pre-bake it. But if I pre-bake it, it gets a weird bubble no matter what I do to prevent that.

    Okay. I’m tired of talking about crust.

    But please tell me exactly what to do to get a perfect crust every time. 

    So yeah, it was Spring Break.

    We go to the Cameron Park Zoo in Waco every Spring Break since we moved here (3rd year!) because the weather is always perfect zoo weather this time of year.

    It’s too cold to walk around the zoo in February, too hot in April.

    Texas.

    We also always go to Torchy’s after the zoo because we don’t have one down this way and I love any excuse for Torchy’s. Tried the new catfish one, mostly because its called Alabama Shake, and it was delicious. Because all Torchy’s tacos are delicious.

    Other Spring Break activities included Black Panther, cupcake shops, rock painting, library visits, and finding our first Bluebonnets on a bike ride.

    Bacon Alfredo Pizza!

    Okay, back to the pizza.

    Use a tried and true pizza crust recipe. Or use a Pillsbury crust. Use whatever you like.

    It’s a quick and easy (4 ingredients!) alfredo sauce recipe topped with bacon, baby spinach, and a bunch of shredded mozzarella.

    My kids love a white pizza and they love bacon, spinach, and cheese so this one was a hit with everyone. Even if the crust was pale and cracked and hideous.

    I’m gonna figure out pizza crust eventually. Maybe. Hopefully.

    Bacon Alfredo Pizza

    Bacon Alfredo Pizza
    Prep Time 20 minutes
    Cook Time 15 minutes
    Total Time 35 minutes

    Ingredients

    For the alfredo sauce:

    • 2 tablespoons salted butter
    • ½ cup heavy whipped cream
    • 2 cloves garlic, minced
    • 1 cup shredded Parmesan

    For the pizza:

    • 1 pizza dough, risen and ready to bake
    • 4 slices bacon, cooked and crumbled
    • ½ cup baby spinach
    • 1 cup shredded mozzarella
    • green onions, thinly sliced

    Instructions

    1. Preheat oven to 450F. Place pizza stone in oven to preheat, if using.
    2. To make the alfredo, melt butter over medium-low heat. Whisk in cream and let cook for about 5 minutes, continuing to whisk. Remove from heat; whisk in garlic and Parmesan until the cheese is melted and the sauce is smooth.
    3. Stretch dough on a cornmeal dusted surface to desired size. Spread alfredo sauce on top, leaving about an inch around the edges. Sprinkle with bacon and spinach and top with mozzarella.
    4. Bake 12 - 15 minutes, or until crust is golden brown and the cheese is melted and starting to brown. Sprinkle with green onions before serving.

    Skinny Tequila Sunrise Margarita

    Skinny Tequila Sunrise Margaritas is a low calorie margarita recipe using low sugar orange juice, limes, tequila, orange liqueur, and a little grenadine on the bottom to make it look like a sunrise. Enjoy these skinny margaritas all summer with absolutely no guilt!

    I made us margaritas because I am so done with winter and can’t even believe it’s still 30-something degrees in the mornings.

    And is there anything that makes you feel more summery than a gorgeous margarita?

    I mean, maybe it not being 30 degrees so you can wear your cute summer clothes would make you feel more summery. But these Skinny Tequila Sunrise Margaritas will have to work for now.

    Skinny Tequila Sunrise Margaritas - a low calorie margarita recipe using low sugar orange juice, limes, tequila, orange liqueur, and a little grenandine. The perfect summer cocktail!

    Why Is It Called Tequila Sunrise?

    Tequila sunrise got it’s name because it looks like a sunrise!

    The grenadine (a red syrup made from pomegranates) settles at the bottom of the glass and then starts to mix with the rest of the drink so the bottom looks red, the middle looks orange, and the top is yellow.

    It’s one of my favorite drinks because it’s just so pretty!

    Ingredients

    • Tequila
    • Orange liqueur
    • Fresh-squeezed lime juice
    • Low sugar orange juice – Trop 50 is my favorite brand for these margaritas
    • Liquid sugar free sweetener – I love liquid Splenda for these drinks (and coffee and tea and everything!)
    • Ice
    • Grenadine syrup
    • Salt
    • Lime wedges
    • Cherries

    Directions

    • Run a lime wedge around the edges of 2 glasses and dip in coarse salt
    • Fill glasses with ice; set aside
    • In a pitcher, stir together tequila, orange liqueur, lime juice, orange juice, and liquid sweetener
    • Divide into the prepared glasses
    • In the center of each glass, drop a few drops of grenadine syrup and allow it to settle on the bottom
    • Top with lime wedge and cherry

    • 4 ounces lower sugar orange juice, such as Trop 50
    • 1 - 2 drops liquid sugar free sweetener of choice
    • crushed ice
    • grenadine syrup
    • salt, lime wedges, and cherries, for serving (optional)

    Instructions

    1. Run a lime wedge around the edges of 2 glasses and dip into coarse salt (if you want salted rims). Fill with crushed ice and set aside.
    2. In a pitcher, stir together tequila, orange liqueur, lime juice, orange juice, and liquid sweetener. Divide into the prepared glasses. In the center of each glass, add a few drops of grenadine syrup and allow to settle on the bottom. Top with lime wedge and cherry, if desired.

    I actually made a pizza for this post. Like, a real corned beef pizza with homemade slow cooked corned beef turned into a hash and put on pizza crust with lots of cheddar cheese. And then I cracked 3 eggs on top and was sure it was going to be the most delicious corned beef hash breakfast pizza ever created.

    But I forgot about it and by the time I remembered, the hash was black and the egg yolks were definitely not runny.

    Oh well.

    Hi guys, happy last day of the week!

    I’m updating this post for the 3rd time because I hated the pictures. I always say drinks are my favorite to photograph but shakes are a different story. The whipped cream sinks or everything starts melting together so you scrape off the first whipped cream and do another swirl. And repeat 57 times.

    But I love these shakes and I want everyone to make them because they are amazing. Plus I read that McDonald’s is only releasing them to select restaurants this year and that’s just wrong.

    I had my first official McDonald’s Shamrock Shake 2 years ago, I think. Crazy, right? This recipe had been on my site for several years at that point.

    This McDonald's copycat recipe for the Shamrock Shake is perfect for St. Patrick's Day or any day you need a sweet, minty treat! Only 4 ingredients!

    Ingredients

    • Vanilla ice cream – use your favorite brand or homemade vanilla ice cream recipe!
    • Milk
    • Mint extract
    • Green food coloring – if you are against food coloring, you can leave it out. Your shamrock shake will still be delicious, even if it’s not green.
    • Whipped cream – you can use the kind from a can, Cool Whip, or make your own homemade whipped cream.
    • Green sprinkles

    Instructions

    • Blend shake ingredients. Combine ice cream, 1 cup milk, mint extract and a few drops of green food coloring in a blender and blend until combined. Add remaining ¼ cup of milk if the shake is too thick.
    • Adjust color. Use more green food coloring to get desired color.
    • Serve. Top with whipped cream and green sprinkles before serving.

    Can You Make It Dairy Free?

    You can make a Homemade Shamrock Shake dairy free by using dairy free vanilla ice cream and your favorite nondairy milk. I recommend a creamy nondairy milk like oat milk for this recipe.

    The nondairy version is just as delicious!

    Pecan Oat Pancakes

    Fluffy pancakes filled with pecans and oats! Pecan Oat Pancakes are a delicious, hearty breakfast.

    What kind of pancake person are you?

    Are you a plain, fluffy pancake person or do you need stuff in your pancakes?

    I need something in mine. Preferably something with some texture. A crunchy nut or a super juicy blueberry. A break from the soft pancake, you know?

    So for these, I did chopped pecans and to make them a little heartier, I added some oats that I ground up slightly in the food processor.

    Okay, I am totally the girl that sees a recipe that calls for ground oats and says NOPE because that’s an extra step, an extra thing to wash, etc, etc, etc.

    But it’s so worth it for these pancakes. Just pulse the oats until they look like a coarse flour, no need to get it totally smooth.

    Related: I can’t get the top off the food processor and BF is out of town so it’s just sitting on my counter, unwashed, right now. Had to turn it upside down and shake it to get the oats out. I don’t know how these things happen to me.

    If you love your pancakes with stuff inside like me, you should totally make these next time you feel like making a weekend breakfast. Or breakfast for dinner one night. Whatever.

    Ingredients

    • Old-fashioned oats – these are going to get blended up in a food processor to make oat flour. It gives the pancakes a nutty flavor and makes them a little heartier than pancakes made with only flour
    • All-purpose flour
    • Baking powder
    • Salt
    • Brown sugar
    • Unsalted butter
    • Eggs
    • Milk
    • Vanilla
    • Pecans – you can use another nut if you prefer. Walnuts, chopped macadamia nuts, or hazelnuts would be delicious

    How To Make Pecan Oat Pancakes

    • Make oat flour. Place oats in a food processor (or blender) and process until it looks like a coarse flour. Transfer to a mixing bowl.
    • Combine dry ingredients. Add flour, baking powder, and salt to oat flour; whisk to remove any lumps.
    • Add wet ingredients. Add brown sugar, butter, eggs, milk, and vanilla; mix until combined.
    • Add pecans. Fold in chopped pecans.
    • Cook pancakes. Use a ¼ cup measure to drop onto a hot griddle and cook until bubbles appear on the surface. Flip and cook until golden brown.

    Can You Freeze Pancakes?

    Yes, these Pecan Oat Pancakes are perfect for the freezer! I like to freeze them in a freezer ziploc bag (make sure you squeeze as much air out as possible) and they will stay good for up to 2 months. 

    You can let them defrost overnight in the fridge and then reheat in the toaster or oven.

    Kitchen Sink Oatmeal Cookies – oatmeal cookies filled with everything but the kitchen sink! Chocolate chunks, white chocolate chips, cinnamon chips, walnuts, raisins, and coconut!

    When we moved I realized I had a lot of mostly empty bags of chocolate chips.

    A lot.

    Same goes for pecans, shredded coconut, almond meal, bottles of vanilla, all the stuff I always think I’m out of when I’m out the store and apparently am never actually out of it.

    Plus, 15 packages of almond bark even though I only use almond bark once a year for crockpot candy…? I don’t know, guys.

    I guess everyone I know is getting crockpot candy for Christmas next year.

    This Kitchen Sink Oatmeal Cookies recipe is the perfect way to use up all those bags that only have a few tablespoons of chocolate chips or ⅓ cup of mini M&Ms. Just make the oatmeal cookie dough and throw in whatever you have.

    I happened to have almost empty bags of semisweet chocolate chunks, white chocolate chips, cinnamon chips, walnuts, raisins, and coconut. If you have chopped hazelnuts or maybe some butterscotch chips or some dried cranberries, throw those in instead. There’s really no wrong way to do these.

    I love all the different textures in a cookie like this especially the crunchy walnuts with the squishy raisins. I hate an oatmeal cookie that only has a couple raisins scattered throughout – I need a lot going on in an oatmeal cookie and this totally does it for me.

    How Long Are Cookies Good For?

    These cookies are good for about 3 days before they lose their freshness. Make sure to store them in an airtight container.

    You can also freeze them for up to 3 months. I usually just use a ziploc freezer bag and make sure to squeeze all the air out. Defrost in the fridge or on the counter when you’re ready to serve. 

    Where To Find Cinnamon Chips?

    You should be able to find cinnamon chips at most grocery stores in the baking aisle with the regular chocolate chips. I see them more often around the holidays so stock up!

    If you can’t find them in store, you can always order them online.

    Ingredients

    • ½ cup unsalted butter, softened
    • ½ cup brown sugar
    • ¼ cup granulated sugar
    • 1 egg
    • ¾ cup flour
    • ½ teaspoon baking soda
    • ¼ teaspoon cinnamon
    • ¼ teaspoon salt
    • 1 ½ cup old fashioned oats
    • ¼ cup walnuts or pecans, roughly choppd
    • ¼ cup semisweet chocolate chunks
    • ¼ cup white chocolate chips
    • ¼ cup cinnamon chips
    • ¼ cup raisins
    • ¼ cup sweetened coconut

    Instructions

    1. Preheat oven to 350F. Line 2 baking sheets with parchment paper.
    2. In the bowl of a stand mixer fitted with a paddle attachment, cream butter and sugars together until light and fluffy. Add egg and beat until combined.
    3. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt to remove any clumps. Stir in oats. Add this mixture to the butter mixture and beat until just combined. Use a rubber spatula to add the nuts, chocolate chunks, white chocolate chips, cinnamon chips, raisins, and coconut.
    4. Drop by rounded tablespoons until the prepared baking sheets. Bake 11 - 12 minutes or until golden brown, rotating the sheets halfway through. Let cool on the baking sheets for about 5 minutes before transferring to a wire rack to cool completely.

    My life is still a crazy busy mess. So crazy that BF was actually in charge of this recipe. He made these Texas Toast Pizzas for the boys months and months ago and I noticed them when I was scrolling through the pictures on my phone while avoiding doing something important and time sensitive early last week.

    ANYWAY. I casually mentioned to him that I was thinking about making them for this post and the next day all the ingredients were magically in the kitchen and he was ready to make them for me.

    If I haven’t mentioned it yet, I don’t deserve him.

    Also, yesterday he was outside washing his truck and came inside and said, “There’s a big long-haired German shepherd out here if you want to meet it” and yes, of course I want to pet the giant dog while you make small talk with the neighbors. This is exactly how I need this relationship to work.

    Ingredients for Texas Toast Pizza

    • Frozen garlic Texas toasts – you can even use the cheese kind if you want it extra cheesy!
    • Pizza sauce – use your favorite store-bought or homemade pizza sauce.
    • Mozzarella cheese
    • Toppings of choice – we used mini pepperoni and Italian sausage but you can use whatever your usual pizza toppings are!

    Instructions

    • Prepare. Preheat oven to 425F. Line a baking sheet with parchment paper and place 8 Texas toasts on it.
    • Bake. Bake in preheated oven for 3 minutes.
    • Add toppings. Remove from oven and top each one with about 1 tablespoon of sauce, ¼ cup cheese, and 1 tablespoon of the topping.
    • Bake. Bake for another 4 – 5 minutes, until sauce is melted and crust is golden and crispy.

    How Long Is It Good For?

    Hi guys, I don’t usually post on the weekends but I’ve been holding onto the photos for this Loaded Baked Potato and Cauliflower Soup for weeks now and wanted to get it post while the weather is terrible and we’re all freezing.

    I had plans today, got all the kids in the car, and then immediately drove home after putting gas in the car because I literally couldn’t.

    Too cold for me.

    How To Make Loaded Baked Potato and Cauliflower Soup

    This soup is really simple and really quick to put together just a few ingredients and it’s probably all stuff you have on hand. Potatoes, onions, cauliflower, bacon, stuff like that.

    I had the soup finished and on the table in less than 30 minutes. 

    • Fry bacon in a large stock pot; remove bacon and leave bacon fat in the pot
    • Cook onions in the bacon fat
    • Add potatoes, cauliflower, and chicken stock to the pot
    • Simmer until the potatoes are cooked through, about 15 minutes
    • Puree the soup 
    • Serve immediately; top with bacon, cheese, sour cream, and chives 

    Can You Freeze Loaded Potato and Cauliflower Soup?

    Yes! This is the perfect soup to freeze since there is no dairy in it. Freeze it in an airtight container (I like freezer ziploc bags – make sure you squeeze out as much air as possible) and it will stay good in the freezer for up to 3 months. 

    Let it defrost overnight in the refrigerator and then you can reheat in the microwave, stovetop, or the slow cooker. If it seems too thick, a couple splashes of chicken broth will get it back to it’s original texture.

    Loaded Baked Potato and Cauliflower Soup

    Loaded Baked Potato and Cauliflower Soup
    Prep Time 10 minutes
    Cook Time 40 minutes

    Ingredients

    • 4 large slices extra-thick cut bacon
    • 2 onions, chopped
    • kosher salt and freshly ground black pepper
    • 2 large russet potatoes, peeled and cut into ½-inch pieces (about 5 cups)
    • 1 medium head cauliflower, cut into small florets (about 6 cups)
    • 8 cups chicken stock
    • sour cream, chopped fresh chives, and grated cheddar cheese, for serving

    Instructions

    1. Heat a large soup pot over medium-low heat. Place the bacon slices flat int he pot and cook, turning a couple times, until crispy and most of the fat has drained from the bacon, 8 to 12 minutes total. Using tongs, transfer the bacon to a paper towel-lined plate, leaving the fat in the pot.
    2. Add the onions, 2 teaspoons salt, and 1 teaspoon pepper. Cook, stirring often, until the onions are translucent and soft, 10 to 12 minutes.
    3. Stir in the potatoes, cauliflower, and stock, cover, and bring to a boil over high heat. Reduce to a strong simmer and cook, stirring here and there, until the potatoes are very soft, 15 to 20 minutes.
    4. Puree the soup, using a blender in batches or a handheld immersion blender. Taste and season with additional salt and pepper, if you like.
    5. Slice or tear the cooked bacon into bite-size pieces and sprinkle it over bowls of the soup. Serve topped with sour cream, chives, and cheese.

    Heeeey guys, happy Wednesday!

    I feel like I haven’t shared a cocktail in forever.

    But, you know, I buy a bag of blood oranges every time I’m at the store just in case it’s the last time I see them. And I have 3 children which means that I’m at the store at least every other day.

    I swear half my fridge is blood oranges right now.

    One of my deep dark secrets is that I never use simple syrup when I make myself a cocktail.

    All my recipes that talk about simple syrup? I handed those to somebody else and made another with splenda.

    Look, I know it’s not good for me but I’d rather use those calories on literally anything else.

    But I made the switch over to liquid stevia recently and it’s kind of changed my life. I put it in my coffee every morning but the real reason I love it is that it’s perfect in cocktails because there’s no dissolving anything.

    So I used it in these Skinny Blood Orange Margaritas which are just like my regular Blood Orange Margaritas but we’re not fussing around with a simple syrup this time. 

    Skinny Blood Orange Margaritas - the perfect low calorie margarita recipe! Fresh blood orange juice, tequila, orange liqueur, and lime juice create a sweet and tart margarita.

    Ingredients

    • Tequila – use your favorite kind of tequila. I prefer silver tequila over gold for margaritas.
    • Orange liqueur – like Triple Sec or Orange Cointreau.
    • Lime juice – fresh lime juice is best but if you only have bottled, that’s fine.
    • Blood orange juice – the best time to find blood oranges is during winter.
    • Liquid stevia – use your favorite brand, I like the Splenda one.
    • Lime slices – for garnish
    • Coarse salt – this is optional, for the rim. You can leave it off or do a sugar rim if you prefer that.

    How To Make Skinny Blood Orange Margaritas

    • Juice. Squeeze fresh blood orange juice and fresh lime juice
    • Combine. Mix freshly squeezed juice with tequila and orange liqueur
    • Sweeten. Add liquid stevia to desired sweetness 
    • Prep. Prepare the glasses by running a lime slice around the rims and dipping into a plate filled with coarse salt
    • Fill. Fill glasses with ice and pour the margaritas over top
    • Serve. Garnish with a lime wedge and enjoy! 

    Can You Make It Ahead?

    You can make the margaritas ahead and store them in the fridge. Don’t add ice until you are ready to serve.

    I like to make a big batch when I’m hosting a party and keep it in the fridge in a pitcher until guests arrive.

    Difference Between Blood Oranges and Regular Oranges

    The major obvious difference between blood oranges and regular oranges is the color. The blood orange is more of a darker red color because of something called anthocyanin. It has antioxidant effects similar to Vitamin C. 

    There is also a light taste difference. Regular oranges are usually pretty sweet and blood oranges tend to have a little more tartness. 

    Help! I Can’t Find Blood Oranges

    If it’s not blood orange season or you’re just having trouble locating blood oranges, you can definitely substitute a different orange variety. It will be a bit sweeter than this version and not the bright color but it will still be delicious!

    Ingredients

    • 3 ounces tequila
    • 2 ounces orange liqueur
    • 2 ounces fresh-squeezed lime juice
    • 4 ounces fresh-squeezed blood orange juice
    • 1 - 2 drops liquid stevia
    • lime slices, for garnish

    Instructions

    1. Mix tequila, orange liqueur, lime juice, and orange juice together. Add liquid stevia to desired sweetness. In you want salted rims, run the lime slices around the rims of 2 glasses and dip into coarse salt. Fill glasses with ice and pour drink over. Top with lime slices if desired.

    Barbecue Chicken Pizza

    Barbecue Chicken Pizza is a delicious and easy recipe for pizza night! Barbecue sauce, chicken, bacon, pineapple, and red onion layered with colby jack cheese!

    Sooooo, what’d you do this week?

    Did you also freeze because it was ELEVEN DEGREES when you woke up Wednesday morning?

    I had to go out in that 11 degree weather because I’ve been procrastinating getting a new military ID for months now but my temporary pass to get onto Fort Hood was going to expire the next day.

    And why have I been using a temp pass since October?

    When I live on Fort Hood?

    I don’t know. It just seemed easier.

    Anyway. This entire situation with the Army has been a total nightmare but I didn’t expect to burst into tears in the ID card place because no one understood that yes, my ex-husband is no longer in the army but yes, I still need an ID card and no, I definitely don’t need power of attorney or a printed memo from his old chain of command.

    Thankfully a nice man happened to walk by and understood me through my sobs and managed to get my ID done in, like, 3 minutes.

    And my new picture is SO much better than the last one and that’s all that really matters to me.

    Barbecue Chicken Pizza - a delicious recipe for pizza night! Barbecue sauce, chicken, bacon, pineapple, and red onion layered with colby jack cheese!

    Ingredients

    • Pizza dough – use your favorite store-bought or homemade recipe. I love the Trader Joe’s pizza dough.
    • Barbecue sauce – pick your favorite barbecue sauce. I usually use something with a bit of spice since we’re adding sweetness with the pineapple.
    • Colby Jack cheese – you could use cheddar if you prefer.
    • Diced chicken – cook your own or use a rotisserie chicken to make your life even easier.
    • Bacon – you are going to cook and crumble it before adding it to the pizza.
    • Pineapple – I know people have lots of opinions on pineapple on pizza but it’s perfect on a barbecue chicken pizza.
    • Red onion – thinly sliced red onion adds so much to the pizza.
    • Olive oil – this is just for brushing the dough.

    How To Make Barbecue Chicken Pizza

    • Prepare. Stretch pizza dough to desired thickness and shape and place on a cornmeal dusted surface.
    • Top. Spread barbecue sauce on dough, leaving about an inch uncovered around the edges. Sprinkle with about half of the cheese. Layer chicken, bacon, pineapple, and onion and sprinkle with the rest of the cheese.
    • Brush. Brush uncovered crust with olive oil.
    • Bake. Bake at 500F for 12 – 14 minutes until crust is golden brown and cheese is melted.

    How Long Is It Good For?

    Homemade pizza is good for up to 3 – 4 days in the fridge. Make sure to store it in an airtight container.

    You can reheat it in the microwave or if you want it crispy, try a toaster oven.

    Can You Freeze It?

    You can freeze homemade pizza for up to 3 months. Let it cool completely and then wrap in plastic wrap. Place the wrapped pieces in freezer ziploc bags and freeze.

    When you are ready to serve it, let it defrost overnight in the fridge and reheat in the microwave, toaster oven, or toaster.

    Total Time 34 minutes

    Ingredients

    • 1 pizza dough, risen and ready to go
    • ½ cup barbecue sauce
    • 2 cups colby jack cheese, shredded, divided
    • 1 cup diced cooked chicken
    • 3 slices bacon, cooked and crumbled
    • ½ cup fresh pineapple, diced
    • ¼ cup red onion, very thinly sliced
    • olive oil, for brushing the crust

    Instructions

    1. Preheat oven to 500 with pizza stone inside. Once preheated, let continue to heat for at least 15 more minutes.
    2. Stretch pizza dough to desired thickness and shape and place on a cornmeal dusted surface. Spread barbecue sauce on dough, leaving about an inch uncovered around the edges. Sprinkle with about half ot the cheese. Layer chicken, bacon, pineapple, and onion and sprinkle with the rest of the cheese. Brush uncovered crust with olive oil.
    3. Transfer to the hot pizza stone and bake 12 - 14 minutes until crust is golden brown and cheese is melted. Broil for a minute or so if you want that browned cheese look.
